Chicken Pot Pie
One pot meals are my favorite, then combine that with extra comfort foods! Yes please!
Equipment
- Stove top
- Oven
- Enamel cast iron casserole
Ingredients
- Avocado oil spray
- 1 Medium Onion diced
- 1 Cup Celery diced
- 2 tsp Poultry seasoning
- 2 TSBP Land O Lakes light butter with canola oil
- 2 TSBP Flour
- 2 Pounds My crockpot rotisserie chicken ( Recipe Linked in notes )
- 2 Cups Unsalted 98% fat free chicken broth
- 2 TBSP Fat free half and half
- 2 Cups Frozen potatoes O'Brien
- Salt & Pepper to taste
- 1 10oz. Bag of frozen mixed vegetables
- 1/2 tsp Garlic salt
- 1 TBSP Cornstarch
- 10 oz. Skinny Pizza Dough ( Recipe linked in notes )
- 1 Egg Whisked with splash of water
Instructions
- Preheat your oven to 400 degrees
- I pre made a batch of Skinny pizza dough ( Recipe linked in notes ) then portioned out ten 1 ounce dough balls )
- Spray your pan with some avocado oil spray and saute your onion and celery until translucent
- Add the poutlry seasoning and saute for 1-2 minutes
- Add the butter, mix until melted
- Sprinkle the flour in and saute for another 1-2 minutes
- Slowly add the chicken stock in while mixing at the same time. About 1/4 cup at a time on medium heat until mixed properly
- Add the half and half
- Add the frozen potatoes ( Mix up )
- Add the frozen veggies ( Mix up )
- Once all incorporated, add my crockpot rotisserire chicken and juiced in. ( Recipe linked in notes )
- Now start to roll out your 1 ounce dough balls and place right on tope of the mixture
- Brush the top of the dough with the egg wash and sprinkle some more garlic salt on top
- Bake for 25 minutes or until golden brown
