This recipe has been in our family for a long time, i just lightened it to be healthier.

Equipment

  • Mixer
  • Standard cupcake pan

Ingredients

  • 1/2 Cup I can't believe it's not butter the light one
  • 1/4 Cup Sugar or sugar substitute
  • 3 Eggs egg beaters
  • 2 Cup Sifted flour
  • 2 tsp Baking powder
  • 1/2 tsp Kosher salt
  • 1/2 Cup Unsweetened almond milk
  • 1 tsp Vanilla extract
  • 2 Cups Fresh blueberries
  • Zest of lemon or orange

GARNISH

  • 6 tsp Sugar or sugar substitute

Instructions

  • Preheat oven to 375
  • Cream butter and the 1/4 cup sugar in mixer on low speed until fluffy (Scrape bottom of bowl in between)
  • Add eggs one at a time. Mix until blended
  • Combine dry ingredients and add alternately with milk
  • Add the vanilla and lemon zest
  • Beat on high for one minute
  • Lightly coat blueberries with some flour (about 1 tsp). I don't count this flour since it's a very small amount and most of it shakes off anyways. (This helps the blueberries from not sinking to the bottom of the pan)
  • Place the blueberries into batter and lightly fold into the batter with a spatula.
  • Spray muffin pan all around including the top surface
  • Scoop the batter evenly in each muffin space and then sprinkle the 6 tsp of sugar between the muffins on top (1/2 tsp per muffin)
  • Bake for 25-30 minutes
  • Cool in pan for 10-15 minutes before removing

This recipe is great for all year round and makes your house smell wonderful

Equipment

  • Slow cooker or instant pot and use slow cooker option

Ingredients

  • 2 Cups Unsweetened applesauce
  • 10 Apples Peeled and sliced into 1/2 inch slices
  • 1 1/2 TBSP Cinnamon
  • Juice of half a lemon
  • 1/2 Cup Water
  • 1/8 tsp Salt
  • 1 tsp Nutmeg
  • Pinch of ginger
  • Pinch of cloves

Instructions

  • Mix everything up and cook on high for 2-3 hours or low for 4-5 hours depending on thickness of apples. You can keep it the way it is, all rustic or you can emulsify into an apple butter. I personally love the chunks of apples

This is such an easy comfort food for the whole family

Equipment

  • Crockpot

Ingredients

  • 2.5 Pounds Lean chuck roast ( Clean off excess fat if needed )
  • 2 Small onions Sliced
  • 1 12 oz. Light beer ( I used Yuengling Light )
  • 1 10.5 oz. Can of Beef consomme
  • 1 Cup fat free beef broth
  • 1 tsp Dak's steakhouse seasoning Link in notes
  • 1 tsp Worcestershire sauce
  • 2 tsp onion powder
  • 1 tsp Ranch seasoning I use McCormick
  • 1 tsp Dried thyme leaves
  • 2 TBSP Minced garlic
  • Salt & Pepper to taste
  • Parsley to garnish

Sandwich option

  • 1 Roll or Hoagie roll of your choice ( I used a Local bakery hoagie for 3SP)
  • 2 Slices Of cheese of your choice ( I used 2 slices of Jarlsberg light swiss for 2SP )

Instructions

  • Trim any excess fat from chuck and place into crockpot
  • Pour and place every single ingredient into the crockpot
  • Set to low for 8 hours or high for 4 hours. ( I did 4 hours on low and 2 on high, i was on a time crunch)
  • Once time is done. Take out and slice beef
  • I placed back into the au jus until it was time to serve
  • You can serve right away with au jus
  • If you are wanted to make a sandwich, simply place the sliced beef into the roll of your choice, lay some cheese over and place into a 350 degree oven until nice and melted
  • Serve some au jus on the side for dipping

The roll I used is from a local bakery in Waterbury, CT that was sold at Shop Rite in Bristol, CT and was only 3SP for a massive hoagie roll
The cheese I used was a light swiss for 2SP for two slices
