Pumpkin Muffins
This recipe is a family recipe that i lightened up!
Servings: 12 Standard Muffins
Equipment
- Standard cupcake pan
- Oven
- Bowl for mixing
Ingredients
- 1 1/4 Cup Flour
- 1/2 Cup Monkfruit sweetener
- 1 tsp Pumpkin pie spice I use Dak's Spices
- 1/2 tsp Cinnamon
- 1 tsp Baking soda
- 1/2 tsp Salt
- 1 Cup Pure pumpkin puree ( Not pumpkin pie mix )
- 1/2 Cup Unsweetened applesauce
- 1/4 Cup Water
- 2 Eggs ( Sub egg beaters for less points if on WW )
FROSTING
- 6 TBSP Whipped cream cheese
- Splash Cashew milk
- 1 TBSP Confectioner sugar replacement ( I use Swerve brand )
TOPPINGS
- Spray butter
- Cinnamon Sugar
Instructions
- Preheat oven to 350 degrees
- Spray cupcake pan with some cooking spray ( I used the silicone cupcake molds )
- Combine all dry ingredients in a large bowl ( Mix well )
- In a seperate bowl, combine pumpkin, applesauce and water
- Add eggs one at a time, beating well after each addition
- Make a well in the center of the flour mixture
- Add pumpkin mixture and stir until flour is moistened
- Pour in prepared cupcake tins
- Bake for 19-20 minutes or until toothpick comes out dry
- Spray tops with spray butter and then sprinkle cinnamon sugar for those without the frosting
- Cool on wire wrack before removing and spread cream cheese frosting on then sprinkle with cinnamon sugar for those with frosting
