Pumpkin Muffins

This recipe is a family recipe that i lightened up!

  • Standard cupcake pan
  • Oven
  • Bowl for mixing


  • 1 1/4 Cup Flour
  • 1/2 Cup Monkfruit sweetener
  • 1 tsp Pumpkin pie spice
  • 1/2 tsp Cinnamon
  • 1 tsp Baking soda
  • 1/2 tsp Salt
  • 1 Cup Pure pumpkin puree ( Not pumpkin pie mix )
  • 1/2 Cup Unsweetened applesauce
  • 1/4 Cup Water
  • 2 Eggs ( Sub egg beaters for less points if on WW )


  • 6 TBSP Whipped cream cheese
  • Splash Cashew milk
  • 1 TBSP Confectioner sugar replacement ( I use Swerve brand )


  • Spray butter
  • Cinnamon Sugar


  • Preheat oven to 350 degrees
  • Spray cupcake pan with some cooking spray ( I used the silicone cupcake molds )
  • Combine all dry ingredients in a large bowl ( Mix well )
  • In a seperate bowl, combine pumpkin, applesauce and water
  • Add eggs one at a time, beating well after each addition
  • Make a well in the center of the flour mixture
  • Add pumpkin mixture and stir until flour is moistened
  • Pour in prepared cupcake tins
  • Bake for 19-20 minutes or until toothpick comes out dry
  • Spray tops with spray butter and then sprinkle cinnamon sugar for those without the frosting
  • Cool on wire wrack before removing and spread cream cheese frosting on then sprinkle with cinnamon sugar for those with frosting


Points without frosting on Blue & Purple WW plan:
1/1SP, 2/3SP & 3/4SP
Points with frosting for Blue & Purple WW plan:
1/2SP, 2/4SP & 3/6SP
Points without frosting for Green WW plan:
1/2SP, 2/3SP & 3/5SP
Points with frosting for Green WW plan:
1/2SP, 2/5SP & 3/7SP
