Pumpkin Spice Cake With Brown Sugar Center & Pumpkin Maple Glaze
No guilt cake recipe to enjoy as is , with a cup of tea or coffee or topped with some yummy fruit sauces

Ingredients
- 1 Box Sugar free yellow cake mix I used Pilsbury yellow cake mix
- 1/2 Cup Unsweetened applesauce
- 1/2 Cup Non fat plain greek yogurt
- 1 tsp Vanilla
- 4 Eggs Sub egg beaters for less points if on WW green plan
- 3/4 Cup Pure pumpkin puree no pumpkin pie mix
- 2 1/2 tsp Dak's Pumpkin spice
- Pinch of salt
- 1/3 Cup Brown sugar substitute Or use regular but check WW points
Glaze
- 1/3 Cup Confectioners sugar replacement Or regular just check WW points
- 1 TBSP Pure pumpkin puree
- 1 TBSP Sugar free pancake syrup or pure
- Splash of cashew milk If needing to loosen
Instructions
- Spray 9×13 pan with cooking spray and set aside
- Preheat oven to 350
- In a bowl: Cake mix, pumpkin puree, unsweetened applesauce, yogurt , eggs, pumpkin spice and salt.
- Beat with hand mixer on medium speed for 2 minutes
- Pour half the batter into the pan. Sprinkle the brown sugar over layer then pour remaining batter over brown sugar.
- Bake for 35-40 minutes or until toothpick comes out clean
- Mix up the confectioners sugar, vanilla, 1T pumpkin puree, maple syrup and splash of cashew milk ( if needed to loosen )
- Immediately pour glaze over the hot cake
- Cut into 12 once cooled and top with your choice of toppings or leave as is.
