Cheddar Bacon Ranch Smashed Potato Salad

It’s unofficially summer and everyone has parties and BBQ’s to go to so how about making and bringing along my Smashed Cheddar Bacon Ranch Potato Salad?
It has so many well liked flavors across the board and I’m sure everyone will be impressed because I was!
Who doesn't like cheddar cheese, bacon and ranch? Those are probably my top flavor choices! You take all three of those and toss in potatoes, you are going to be the hit to any party you bring this dish along to.

Equipment

  • Air Fryer / Oven
  • Stove top
  • Bowl for mixing
  • Large pot for boiling
  • Strainer

Ingredients

Potatoes

  • 2 Bag Little Potato Company
  • 10 Cups Water for boiling potatoes
  • 2 tsp Knorr chicken bouillon flavoring
  • Avocado oil or Spray for coating potatoes
  • 10 Oscar Mayer center cut bacon crispy & chopped
  • 2 TBSP Dak’s Nothin But Ranch seasoning or homemade ranch seasoning
  • 2 tsp McCormick ranch seasoning
  • 1 tsp Black pepper fresh cracked
  • 1 tsp Onion powder
  • 1 tsp Dried dill
  • Garlic Salt To taste
  • 2/3 Cup Non fat Greek yogurt Chobani
  • 1/4 Cup Light mayonnaise I use Hellman's
  • Mustard powder Pinch
  • 2 Cups Fat free cheddar cheese I use Kraft

Garnish

  • 1/3 Cup Chives Fresh & chopped

Sour Cream Drizzle

  • 1/2 Cup Light sour cream I use Daisy
  • 2 TBSP Unsweetened plain almond milk to loosen sour cream dressing
  • 1 tsp McCormick Ranch
  • Salt & Pepper to taste

Instructions

  • First slice up the potatoes into even unison sizes
  • Grab a large pot and add the water and Knorr seasoning
  • Place all potatoes into the pot and cook until fork slides off potatoes , drain and let sit until cool enough to handle
  • While potatoes cook, cook the bacon until crisp and set aside
  • Once potatoes are cool enough to handle take 3/4 of the amount and place into a bowl.
  • Spray potatoes with avocado oil until coated
  • Season with the Dak’s Nothin But Ranch, McCormick Ranch, Pepper, Onion powder,Dill & Garlic salt to taste
  • Place potatoes on a lightly greased air fryer basket or tray. You don’t want them to stick
  • Air fry at 400 for about 8 minutes or until crisp on the outside
  • Take remaining potatoes and mash up. Place in a bowl and set aside
  • Once all potatoes have come out of the air fryer place into the bowl with the mashed ones
  • In a separate bowl add non fat Greek yogurt, mayonnaise Mustard powder
  • Add the air fried potatoes and toss until coated. Then add the mashed ones
  • Add the chopped bacon, cheese and chives. Pour out onto a serving platter or keep in bowl
  • In a separate small bowl mix up the light sour cream, McCormick Ranch, Salt & pepper to taste and drizzle over the top of the potato salad
