This was such an amazing and flavorful pasta dish! It came together in no time and was full of summer flavors from fresh roasted tomatoes and some fresh basil from my herb garden.
Gilbert's chicken sausages are so great for meals , they are individually packaged for convenience and packed full of amazing flavor.

Ingredients

  • 112 Grams al dente carba-nada fusilli pasta Find them on amazon or on their site
  • 1 tsp Knorr chicken bouillon flavoring
  • 2 Cups reserved pasta water
  • 2 Gilbert's Sausages Caprese
  • 1 Pint roasted grape tomatoes
  • 6 Garlic cloves roasted
  • Avocado oil spray to lightly coat tomatoes & garlic
  • 1 tsp Italian seasoning I used Dak's Italian Blast
  • 1 Cup frozen spinach use 2 cups if fresh
  • 1/4 Cup My pesto on my blog
  • 1 oz. Fresh part skim mozzarella
  • Fresh lemon zest & juice to garnish
  • Fresh basil to garnish
  • Salt & pepper to taste

Instructions

  • First roast your tomatoes and garlic. I had already had them done so I didn't need to do this step. Set oven to 400. Place tomatoes and garlic cloves on a parchment lined sheet pan. Spray lightly with avocado oil and season with salt, pepper and Italian seasoning
  • Now it's time to cook the pasta according to the package. While pasta is cooking reserve 2 cups of the pasta water right before you are about to strain
  • Set pasta aside
  • Slice up the chicken sausages and place into a pan lightly coated with cooking spray. Brown lightly
  • Add the spinach, tomatoes, garlic and pasta
  • Slowly add the pasta water to thicken up a sauce. A nice sauce will be created from the pasta water and the juices from the roasted tomatoes.
  • Season to taste with salt and pepper
  • Garnish with the fresh mozzarella and fresh basil
