Need a new twist on a cheeseburger? This was so fun to put together and absolutely delicious! The fun twist on a burger bun with the mini cheese quesadillas, creamy avocados and smoky mayo.

Equipment

  • Flat top , griddle or pan

Ingredients

  • 4 Mission street tacos carb balance whole wheat tortillas
  • 2 Non fat American cheese slices Shop Rite brand
  • 28 Grams Fat free cheddar cheese Kraft brand
  • 4 oz. 96/4 ground beef 2 oz. patties each
  • 1/4 tsp Dak's Spices Steakhouse seasoning code:chefallie10 for 10% off
  • 1/4 Cup canned, frozen or fresh corn if canned, drain. If frozen, defrost
  • 1/4 tsp Dak's Street Taco seasoning
  • Salt & pepper to taste
  • 28 grams Avocado Sliced thin
  • Tomato slices seasoned with salt & pepper
  • Lettuce
  • Jalapenos canned
  • Limes to garnish
  • Cilantro to garnish

Smoky Chipotle Mayo

  • 1 TBSP Light mayo Hellman's brand
  • Smoky paprika chipotle seasoning pinch

Instructions

  • Mix the mayo and smoky chipotle paprika together. Leave in the fridge until ready to use
  • In a pan, place the corn and street taco seasoning in. Saute until charred. Set aside
  • Weigh out the burger patties, season with salt, pepper and Dak's steakhouse seasoning. Make sure your beef is at room temperature.
  • Time to make the quesadilla "buns" . Place the 4 tortillas down, and put the non fat American cheese slices down and fat free cheddar cheese. Place the other tortillas down and make your quesadilla "buns".
  • While you are making the "buns" time to make the burger patties. Once done , set aside and get all other ingredients together.
  • Assemble time. I placed one quesadilla down first, lettuce, tomato, slices jalapenos, charred corn & cilantro. Then placed the two patties down and topped with avocado, season the avocado with salt then place the other quesadilla on top that I smeared the smoky chipotle mayo on.
  • Garnish with some lime juice.

Right now is the perfect time to enjoy peaches! They are in season and are absolutely delicious. I love my peaches as is, grilled, baked or just tossed into a delicious salad.
I air fried the chicken with some amazing spices and while that was air frying I put this easy yet so delicious salad together in minutes.

  • 1 Chicken Breast
  • Dan O's Seasoning Original
  • Salt & Pepper To taste
  • Mixed greens
  • 1 Mini cucumber Sliced
  • Red onion Sliced thin
  • 1 Peach Peeled, Pit removed and sliced
  • 1 ounce Gorgonzola cheese crumbles
  • 2 TBSP G Hughes sugar free raspberry vinaigrette or dressing of your choice
  • Fresh chives to garnish

Instructions

  • First season the chicken with salt, pepper and Dan-O's Original seasoning or seasonings of your choice
  • Spray either the chicken or air fryer basket with cooking spray to prevent sticking while chicken is air frying.
  • Air fry at 400 for about 12-15 minutes or until internal temperature reaches 165 degrees. Set aside and rest while the rest of the salad is being assembled
  • Peel the peaches, and slice up into desired sizes. Make sure to remove pits.
  • In a large bowl place the greens, sliced onions, peaches, mini cucumbers , gorgonzola . Slice up the chicken after it rests for about 10 minutes
  • I just grabbed a store bought raspberry dressing . I love the G Hughes sugar free raspberry vinaigrette or dressing of your choice
  • Garnish with fresh chives

My loaded hummus dip will be the talk of the next BBQ you attend!
It is full of amazing vegetables and smooth and creamy hummus that is bulked with roasted cauliflower that I puréed into this creamy delicious dip!
Serve with your choice of dippers or slab this onto a sandwich, wrap or even place on top of some grilled chicken! Whatever you decide to do will be delicious!

  • Mixing bowls

Ingredients

  • 1 Head Cauliflower
  • Avocado oil spray
  • 1/2 tsp Salt
  • 1/2 tsp Pepper
  • 1 TBSP Lemon zest
  • 2 TBSP Lemon juice
  • 1/3 Cup Unsweetened almond milk
  • Salt & pepper to taste
  • 1 10 oz. Original Hummus Store bought, Aldi
  • 2 Mini cucumbers sliced or diced
  • 1/2 Cup Grape tomatoes quartered
  • 1 Small Red onion diced
  • 11 Black olives quartered
  • 1/3 Cup Fat Free feta Athenos
  • 1/4 Cup Parsley Chopped
  • 1/2 tsp Dak's Super Greek seasoning
  • 1 TBSP Olive oil La Panza is what i used
  • Paprika to garnish

Instructions

  • Preheat oven to 425
  • Cut cauliflower into unison pieces, place on a sheet pan , spray lightly with avocado oil and season with salt and pepper
  • Roast for 20-25 minutes
  • Set aside to cool off
  • While the cauliflower is cooling off, prep and chop the veggies. Place into a bowl then mix in the feta cheese and parsley, set aside.
  • Once cauliflower is cooled, grab a food processor or blender and put the cauliflower, lemon zest, lemon juice, almond milk and blend until smooth. Season to taste with salt and pepper.
  • In a bowl, place the hummus and cauliflower. Mix until combine
  • On a plate or shallow bowl , pour the mixture in. Top with the veggie mixture
  • Garnish with the olive oil and paprika
  • Enjoy with veggies or mini pitas!

Recipe makes 2 1/2 cups
Serves 10 at 1/4 cup servings
