Peach Cobbler With Blueberry Compote
How about those delicious peaches that are in season right now during these hot summer days? Well grab some and lets make my easy peach cobbler!No need to measure this and that, all you need is your favorite pancake mix! Yes, you heard that right, your favorite pancake mix!I had a bunch of peaches that weren't going to get consumed fast enough since I'm the only one in this house that eats them as is. So i decided to make something that i knew everyone would love! I really wanted to make a cobbler but I didn't want to have to grab a bunch of stuff and throw it all together. I wanted something quick so we could enjoy the pool and sun!I grabbed some pancake mix, jazzed it up and topped it with the fresh in season peaches I got from the market!You know my famous blueberry sauce? Well it took this over the top! I grabbed some from the fridge and topped it with my blueberry sauce and the rest is history. It was absolutely delicious and just tasted like summer!

Equipment
- Pan, Casserole or cast iron ( 10" )
- Bowl
Ingredients
- Cooking spray
- 2 Cups Pancake mix I used Hungry Jack
- 1 1/2 Cup Water
- 1 tsp Cinnamon
- 1 tsp Vanilla
- 5 Peaches Peeled and sliced
- 1 tsp Monkfruit sweetener or sugar
- My Blueberry Sauce Recipe on blog
- Fat free Reddi whip to garnish
- Fresh basil to garnish
Instructions
- Preheat oven to 375
- In a bowl mix up the pancake mix, water, cinnamon and vanilla. Let sit for about 5 minutes
- Get a pan , casserole or cast iron ( I used my 10" Lodge cast iron pan ) . If needed spray with some cooking spray to make sure the batter doesn't stick while cooking.
- Pour the batter in, then top with the sliced peaches
- Sprinkle the sugar over the top
- Bake for about 30 minutes or until toothpick comes out clean
- Turn on broil if you'd like a little more crisp top just for a few seconds
- Top with my blueberry sauce and some whipped cream
- Garnish with fresh chopped basil and a little extra cinnamon ( optional )
