Buffalo Chicken Salad
Calling all buffalo chicken lovers! This healthy salad is for you!

- Crockpot
- Bowl for mixing
Ingredients
Crockpot Chicken
- Avocado oil spray
- 1 Pound fresh or frozen chicken Breast (about 2 cups) or cooked rotisserire chicken
- 2 tsp Dak's Nothin But Ranch seasoning or ranch seasoning of choice
- 1 tsp Dak's Butt Kickin Buffalo seasoning or buffalo seasoning of choice
- Salt & Pepper to taste
- 1/4 Cup Kettle & Fire Chichen bone broth
BUFFALO CHICKEN SALAD FIXINS
- 2 Cups Cooked chicken from above chopped or shredded
- 2 TBSP Broth from crockpot optional
- 2 TBSP New Bolthouse Chunky Blue Cheese yogurt dressing
- 2 TBSP Non fat greek yogurt
- 2 Light laughing cow wedges
- Hot sauce to taste
- 1 tsp Dak's Nothin But Ranch seasoning or seasoning of choice
- 1/2 tsp Dak's Butt Kickin Buffalo seasoning optional
- Salt & pepper to taste
- 1/2 cup Celery chopped
SALAD FIXINS
- 8 Mixed greens 2 cups per person
- 8 Romaine, Chopped 2 cups per person
- 1 cup Red onions diced, 1/4 C per serving
- 1 cup Tomato diced, 1/4 C per serving
- 1 cup fat free cheddar cheese 1/4 C per serving
- 2 cups Cucumbers chopped, 1/2 C per serving
- 60 Good thins crushed, 15 per serving
- 4 TBSP Bolthouse Chunky Blue Cheese to garnish, 1 TBSP per serving
- Black pepper to garnish
Instructions
- First prepare chicken in the crockpot.
- Place chicken into the crock pot and spray lightly with avocado oil
- Season with ranch seasoning, buffalo seasoning and salt & pepper to taste
- Pour the chicken broth on the bottom and set to low for 2-3 hours
- Once done, let cool and either shred or choped chicken
- Place into a bowl and add all of the buffalo chicken salad ingredients
- Serve over a sald and enjoy
