My Caramel Espresso Crunch Protein Ice Cream has to be on my top 3 of my recipes so far. It was so creamy and if you love coffee like me, then you are going to be head over heels with this one.

Not only was this extremely filling with 31g of protein, but it was also only 4 Weight Watchers personal points and only 208 calories on Healthi Calorie Command. 

Once again, I absolutely LOVE my Ninja Creami and I will always be ready to enjoy a pint of ice cream guilt free!

 

 

What you will need: 

  • Ninja Creami ice cream machine
  • Fairlife caramel protein shake
  • Instant espresso (see below for the brand I used)
  • Sugar free butterscotch instant pudding mix
  • DIJAS Natural Foods biscotti (see below for picture and link to site with code in notes for discount)

The shake I used for this one was the Fairlife Caramel and wow this flavor is amazing as an ice cream base. 

Combining that Fairlife with some easy add ins like instant espresso was delicious and definitely a repeat base flavor.

I thought by adding the sugar free butterscotch instant pudding would enhance the caramel flavoring and I was right on!

Have you heard of DIJAS Natural Foods? Well, now you have! They make the most fabulous biscotti cookies with WAY LESS calories and they make for great add ins for my ice creams!

How to make this:

  • Place all of the ice cream base ingredients into the Ninja Creami pint. I usually is a small whisk or you can use a mini blender to make sure its completely blended
  • Place the covered pint into the freezer for a minimum of 12 hours or overnight
  • When frozen, place the pint into the Ninja Creami bowl without the pint top and cover the bowl with the blade and top for the bowl
  • Press the “ice cream” button 
  • Once the mixing is done, you are going to press the “Re mix” button 5-6 times or until nice and creamy/fluffy. It usually takes longer, the longer mixed, the creamier it’ll be.
  • Add the crushed biscotti to the center of the ice cream and press the “Add in” button
  • Enjoy

  • 1 Ninja Creami ice cream machine

Ingredients

ICE CREAM BASE

  • 1 11.5 oz Caramel Fairlife protein shake or caramel shake of your choice
  • 1/2 TBSP Sugar free butterscotch instant pudding mix
  • 2 tsp Instant espresso
  • 1/8 tsp Vanilla extract
  • Pinch of kosher salt

MIX IN

  • 1 DIJAS amaretto coffee biscotti cookies crushed, discount code in notes

Instructions

  • In the creami pint combine and mix the ice cream base ingredients
  • Place the pint in the freezer for 24 hours
  • After the 24 hours place the pint into the Ninja bowl without the lid and place it into the Ninja base
  • Press the "Ice Cream" button and let it run
  • Once done mixing press the "Re Mix" button 5-6 times and in between the mixes scrape the sides with the back of a spoon helping the mixing process
  • Once the ice cream is nice and creamy/fluffy add the biscotti into the center of the ice cream and hit the "Add In" button
  • Enjoy

Zucchini & Grilled Corn Parmesan Pasta

My Zucchini Grilled Corn Parmesan Pasta screams summer flavors. When I think of summer, I think of summer vegetables and what I can make with them.

Every year we start a garden in our backyard, this year we were able to produce a massive amount of zucchini. We also got some amazing corn from my husband’s coworker who owns Tara Farms.

What you’ll need:

  • Pasta
  • Bouillon 
  • Reserved pasta water
  • Zucchini
  • Corn
  • Onions
  • Garlic
  • Grated parmesan
  • Breadcrumbs
  • Lemon zest
  • Lemon juice
  • Salt
  • Pepper

 

This year we had so many large zucchinis as you can see from the pictures above. The corn I used for this recipe came from my husband’s co-workers farm that is located in Litchfield CT called Tara Farms. The corn was so sweet and all I did was grill it as is just for a few minutes while rotating it to get the perfect char. 

With all of the wonderful fresh vegetables we had on hand, I decided to make an east pasta dish to enjoy for the week. It came together in under 30 minutes and make a great meal prep. I add chicken for some extra protein and the flavors were so great together.

Using protein pasta helps with keeping you full longer as well. The dish served 6 and had only 200 calories per serving (Healthi Calorie Command) and only 3 WW personal points with 9.7g of protein per serving without any added protein. 

How to make it:

  1. First char the corn on the grill, set aside to cool. If using just kernels, place into a sauté pan (preferably a cast iron) and cook until slight char. Set aside.
  2. Once the grilled charred corn has cooled off, chuck the corn and set aside the kernels for later use.
  3. Dice the zucchini into 1/2 ” squares. 
  4. In a small sauté pan spray with avocado oil and toast the breadcrumbs for about 1 minute and set aside.
  5. Place the water in a pot with the chicken bouillon and bring to a boil.
  6. Once the water is ready for the pasta, cook until al dente.
  7. Reserve the pasta water for later use.
  8. In a large sauté pan, spray with avocado oil.
  9. Place the zucchini into the pan and sauté for a few minutes.
  10. Add the onions and cook until translucent then add the garlic.
  11. Once zucchini is tender add the corn into the pan.
  12. Take the reserved pasta water and add some in.
  13. Then add the pasta.
  14. Take the remaining pasta water and pour in.
  15. Let the pasta water help thicken and scrap any bits on the pan up to flavor the dish.
  16. Add the grated parmesan. 
  17. Season with salt and pepper to taste.
  18. Add the lemon juice, zest and reserved breadcrumbs and serve.

  • 6 oz Barilla Plus Protein Pasta Weigh out dry
  • 1 TBSP Chicken bouillon I used Better Than Bouillon brand
  • 1/2 - 3/4 Cup Reserved pasta water
  • 1 tsp Avocado oil
  • 4 Cups Fresh zucchini Chopped large 1/2 inch size
  • 1/2 Cup Onions diced
  • 2 Cups Fresh or frozen/canned corn Grilled & charred
  • 1 TBSP Garlic minced
  • 1/4 Cup Grated parmesan
  • 1/4 Cup Whole wheat bread crumbs toasted
  • 1 tsp Lemon juice
  • Zest of one lemon
  • Salt & pepper to taste

Ingredients

ICE CREAM BASE

  • 1 11.5 oz. Fairlife Strawberry protein shake or protein shake of your choice
  • 1 TBSP Simply Delish sugar free strawberry instant pudding mix or instant pudding or your choice
  • 1 Splash Vanilla extract
  • 1 Pinch Kosher salt

MIX-INS

  • 1 7.5 gram bag Brothers All Natural Freeze-Dried strawberries
  • 4 each Aldi animal cookies or cookie of your choice

OPTIONAL

  • 1-2 TBSP Unsweetened almond milk Optional if needed

Instructions

  • In the Ninja Creami pint add all of the "Ice Cream Base" ingredients and mix until combine. Place in the freezer for 24 hours
  • After the 24 hours is up, place the frozen pint into the creami container.
  • Set the machine to "Ice Cream" setting
  • Hit "Re Mix" 5-6 times or until super creamy (Add a splash of unsweetened almond milk in between the re mixes to help it along)
  • Once nice and creamy, add the "Fix Ins" and hit the "Mix In" button & enjoy.
