Pumpkin Baked Oatmeal

Pumpkin Baked Oatmeal

Pumpkin Baked Oatmeal is one of my favorites! This can be done on the stove top like regular oatmeal or in the microwave. I personally love the way it comes out in the oven.  While it is cooking, I usually like to get other things

Peanut Butter Hot Chocolate

Peanut Butter Hot Chocolate

If you love peanut butter and chocolate combination, they you are going to love this peanut butter hot chocolate. It is super simple to throw together and taste delicious.  Here is what you will need: Microwave safe mug or milk frother Unsweetened almond milk Reduced

Crispy Beef and Bean Tacos

Crispy Beef and Bean Tacos

These were a throw together recipe. I had no clue what was going to be for dinner this night. I opened my fridge found some leftover ground beef, an opened can of refried beans, half an onion and a few other ingredients that I always have on hand. Through it all together and this will be a recipe on repeat.

Taco Tuesday is one of my favorite days of the week. I could literally eat tacos daily. I loved this easy recipe, and it came together in no time.

If you need a new recipe for taco Tuesday this should be your next one to make.

Here is what you will need:

  • Air fryer or oven
  • Onion
  • Ground beef
  • Taco seasonings
  • Salt
  • Pepper
  • fat free refried beans
  • Mission ultra thin yellow corn tortillas
  • Lettuce
  • Cucumbers
  • Tomatoes
  • Bolthouse cilantro avocado yogurt dressing
  • Non fat Greek yogurt

This is one of the air fryers from Go Wise that is a MASSIVE size and works amazing. Click HERE for the one I use.

Nothing special about these diced onions. Just make sure they are to your liking when it comes to the size of the dice.

Lean ground beef is great to use when you need a leaner option. It definitely needs seasoning but when it’s made correctly it is no different than any other beef.

Here are the only seasonings I use from Dak’s Spices. What I love so much about Dak’s is the no salt added to the spice mixes, you are in control of the salt. If you’d like to use or try them, use code CHEFALLIE for a discount at Dak’s Spices

This is a great seasoning that is at Trader Joe’s it gives am amazing flavor to any kind of taco dish. It is inexpensive and the flavor is wonderful.

For all of my cilantro lovers, it is a necessity in any taco dish recipe.

Kettle & Fire is a wonderful brand. If you’ve never tried Kettle & Fire and would like to try them, use code CHEFALLIESKITCHEN or click HERE for discount to the site.

These Mission brand ultra thin corn tortillas are the best. They are lower in calories and WW points plus they are a better option for making homemade tortilla chips as well.

You can use any kind of fat free refried beans; I get mine from Aldi.

Here is how to make them:

  1. In a sauté pan first sauté the onions until translucent
  2. Add the ground beef
  3. Season the beef and cook until brown
  4. Add the beef broth as needed to keep it from burning and to add moisture back into the ground beef
  5. Add the refried beans and more broth if needed
  6. Set the air fryer to 420 degrees
  7. Take the ultra-thin corn tortillas and distribute the beef mixture evenly on one side of the tortillas
  8. Sprinkle an even amount of cheese to each tortilla as well
  9. Close the tortillas up, spray the tops and place into the air fryer
  10. Cook for about 6-8 minutes or until nice and golden brown and crispy
  11. Serve along a side of lettuce, tomatoes and cucumbers with the dressing

BBQ Peach Crockpot Chicken

BBQ Peach Crockpot Chicken

This was a dish that was a grab what you have and hopefully it turns our good dish!

This came out AMAZING! It was extremely easy to put together and the flavors was a sweet, savory with a little spice.

Serve over rice or with a bunch of sides like I did. I roasted a small squash, made a quick broccoli slaw with a side of steam in bag broccoli as well.

Made great for meal prep for the week as well.

Here is what you will need:

  • Crockpot
  • Chicken (Fresh or frozen)
  • BBQ sauce (I used sugar free)
  • No sugar added canned peaches or fresh
  • Red onions
  • Banana peppers
  • Dak’s BBQueen seasoning (optional)
  • Salt
  • Pepper
  • Garlic

Here is the crockpot I just recently purchase off of Amazon. It is great and has a delayed cooking option. Order HERE if interested.

Here is the frozen chicken that I buy from Costco. It is the best price and the chicken is great.

You can use whatever BBQ sauce you’d like but I prefer to use this sugar free one from G Hughes

The convenience of the no sugar added peaches is great. You can use fresh but I do recommend peeling them prior to adding to the crockpot

This was a last minute decision adding the hot peppers and I’m glad I did. Broke up the sweetness from the BBQ sauce and the peaches.

I was originally going to use regular white onions but didn’t have enough so I went with the red onions. I like the color added into the dish as well.

Here is how to make it:

  1. Add the fresh or frozen chicken to the crockpot
  2. Spray lightly with avocado oil
  3. Season the chicken with salt and pepper to taste
  4. Add the garlic powder and BBQueen seasoning over the chicken
  5. Pour the BBQ sauce, peaches, onions, banana peppers and banana pepper juice over the chicken
  6. Set the crockpot to low for 6 hours
  7. Once done, either keep whole or shred
  8. Enjoy with your choice of sides

KFC Bowl

KFC Bowl!

Have you ever heard of the KFC bowl? Well, when I was younger this was the best thing since sliced bread.

It has mashed potatoes, gravy, shredded cheese, corn and fried chicken. The entire SMALL bowl is 720 calories. It is 20-22 WW personal points.

I am going to show you an even better way to still enjoy that bowl with WAY less calories and WW personal points.

If you love cauliflower, then you are going to be even more excited.

My version is only 5 WW personal points with points gained back from non-starchy vegetables and only 339 calories on Calorie Command at Healthi.

Here is what you will needs:

I love my Instant Pot, if you do not have one, I highly recommend getting one. It cuts cooking time WAY shorter than on the stove top plus, it has so many other functions! Order one here

This is a great steamer basket to have, you should definitely have a steamer basket in your house. It is a great way to good vegetables without added oil or fats. Order one here.

Kettle & Fire products are AMAZING! If you have never tried them out, I do recommend giving them a go. I have a discount code or just click this link HERE to try them out.

Here is where you cut all the points and calories. By turning regular mashed potatoes into cauliflower mash. I personally LOVE cauliflower but if you do not, then go ahead and use regular mashed potatoes. The points and calories however will change.

Garlic makes everything better, that is all.

I used my blender, I do have a Vitamix, but here is a cheaper blender with good reviews here.

Here is a blender with great reviews and that is not super expensive. Order it HERE.

Here is the cheese I use when making the cauliflower mash, it melts beautifully into the hot cauliflower making it less points and calories.

This gravy is GREAT! Especially when we need a quick and delicious meal. The calories are great with 1/4 cup per serving at only 30 calories.

Corn with no salt added is another great option. You can control the salt added to your food and or recipes.

Here is how to make it:

  2. Pour the chicken broth into the Instant Pot or Large pot.
  3. Add the garlic cloves to the bottom of the Instant Pot or large pot
  4. Place the steamer basket into the Instant Pot or large pot
  5. Put the cauliflower into the steamer basket
  6. Press the pressure cooker setting and set on high for 3 minutes. If using the large pot, cover and simmer liquid until cauliflower is tender
  7. While the cauliflower is cooking, get the other ingredients together.
  8. Portion out the rotisserie chicken to 4 ounces per person
  9. Add the canned corn into a microwavable bowl with the liquid, Warm the corn until nice and hot
  10. When cauliflower is ready, add to the blender or food processor with the garlic cloves
