Chicken and White Bean Chili

I staple in my WW journey since the beginning. I know there are MANY versions of this one, but here is mine.

This is a great meal prep option, and it takes minimal effort to make.

It is ONLY 1 WW and 339 calories.

Here is what you need:

  • Crockpot or Instant pot
  • Chicken breast
  • Salt
  • Pepper
  • Taco seasoning
  • Onion powder
  • Garlic powder
  • Cumin
  • Chili powder
  • White northern beans
  • Corn (fresh, frozen or canned)
  • Ratel tomatoes
  • Kettle & Fire chicken broth (or broth of choice)
  • Fresh limes
  • Whipped cream cheese
  • Fresh cilantro
  • Toppings of choice

 

You can use the crockpot, or you can use the Instant Pot. HERE is the link for the crockpot I use and HERE is the link for the Instant Pot I use. 

You can use fresh or frozen chicken.

Season this to taste with salt and pepper.

Another set of spices I always have on hand. Garlic powder and onion powder are essential spices.

The chili wouldn’t be complete without ground cumin and chili powder.

The white beans are a part of this chili but if you do not like heat you can leave the ROTEL tomatoes out and just use regular diced tomatoes. 

You can use canned, fresh or frozen corn.

I a BIG fan of cilantro, but if you do not like it you can leave it out. 

The Kraft fat free cheddar cheese is the one I’ve been using since the beginning on my WW journey and continue to use it as well.

Here is how to make it:

  • Add the chicken into the crockpot.
  • Season with salt and pepper to taste.
  • Add the garlic powder, onion powder, chili powder and ground cumin.
  • Add the beans, corn and rotel tomatoes.
  • Pour the chicken broth over everything.
  • Set to low for 6-8 hours.
  • Once all done, shred the chicken.
  • Squeeze the fresh lime into the crockpot.
  • Add the whipped cream cheese and mix until combine.
  • Garnish with your favorite toppings.

Ingredients

  • 1 Pound Chicken breast
  • Salt to taste
  • Black pepper to taste
  • 1 TBSP Taco seasoning
  • 1 tsp Garlic powder
  • 1 tsp Onion powder
  • 1 tsp Chili powder
  • 1 tsp Ground cumin
  • 28 ounces Northern white beans Rinsed & drained
  • 14 ounces Corn Canned, frozen or fresh
  • 1/2 Cup Rotel tomatoes
  • 3 Cups Kettle & Fire chicken broth or broth of choice
  • 1 Juice of lime
  • 1/4 Cup Whipped cream cheese
  • 1/2 Cup Cilantro Chopped & optional

Instructions

  • In the crockpot add the chicken breast.
  • Season with salt, pepper and taco seasoning.
  • Add the garlic powder, onion powder, chili powder and ground cumin.
  • Add the canned beans, corn and rotel tomatoes.
  • Pour the chicken broth over everything.
  • Set to low for 4-6 hours.
  • Shred the chicken.
  • Add the fresh squeezed lime juice
  • Add the whipped cream cheese and stir until combined.
  • Serve and garnish with your choice of toppings.
