One pan meals are also my jam as well. Busy mom of 3 needs something with quick and easy clean up.

Meal prep ideas? This reheats well and can also freeze well no problem!

Roasted Butternut Squash & Sausage Lasagna Casserole

One pan meal and ready to serve in less than an hour.

Equipment

  • Oven safe casserole dish

Ingredients

  • 1 Large Butternut squash About 3 cups cooked
  • Avocado oil to coat pan
  • 1 Shallots Minced
  • 3 Garlic cloves Minced
  • 8 Barilla whole grain lasagna sheets Broken up
  • 1 Cup Reserved pasta water
  • 1/2 Cup Part skim ricotta
  • 3 TBSP Alouette reduced garlic and herb
  • 1 Bag Jimmy Dean turkey sausage crumbles about 1 1/2 cups
  • 1 tsp Ground sage
  • 2 tsp Italian seasoning
  • 1/2 Cup Kraft fat free mozzarella cheese
  • 1/4 tsp Nutmeg
  • Salt & Pepper to taste
  • 2 Cups Fresh spinach Chopped
  • Parmesan cheese to garnish

Instructions

  • First set oven to 425
  • Slice butternut squash in half, season with salt & pepper and place cut side open down on a sheet pan and roast for about 40 minutes
  • While squash is roasting, place frozen turkey sausage crumbles into a lightly greased shallow casserole pan ( I use a shallow dutch oven ). Remove when browned.
  • In the same pan sautรฉ the shallots for a few minutes until they are translucent.
  • Add the garlic and saute for another 30 seconds.
  • Once shallots and garlic are cooked get the lasagna sheets and break up into chunks. Cover the sheets with water, just enough to cover.
  • Place lid over and cook until pasta is al dente. About 10-12 minutes. Most of the water should be used. do not strain.
  • Once butternut squash is done, scoop out half and cut up the other half into large chunks.
  • Add the part skim ricotta, alouette, seasonings , scooped butternut squash and put sausage back in.
  • Season with salt and pepper to taste
  • Once all combined, time to add the chopped spinach and mix until wilted. Top with chunks of butternut squash.
  • Sprinkle mozzarella on top , place back into oven until melted. Garnish with parmesan and serve.

How adorable is this? Just in time for the fall holidays and chilly nights! Squash has to be my all time favorite vegetable. You can do so many things with it and its absolutely amazing!

I took this big acorn squash, roasted it and then stuffed it with this lightened taco & cauliflower rice mixture. The mixture is delicious on it’s own but even more amazing inside the sweet and creamy roasted acorn.

Ingredients

  • 2 Large Acorn Squash
  • Avocado oil spray Light
  • 2 tsp Ranch seasoning I used Dak's Nothin But Ranch
  • Salt & Pepper to taste
  • 1 Small Onion Chopped
  • 1 Pound Ground beef 96/4
  • 1 TBSP Taco seasoning I used Dak's Taco Knight
  • 1 Can Rotel Drained
  • 1 Can Black beans Drained & Rinsed
  • 1 1/2 Cup Plain cauliflower rice I used steam in bag
  • 1/2 Cup Cilantro Chopped fine
  • 2 oz. Cheddar cheese of your choice

Instructions

  • First set oven to 400. Cut acorn squash in half and scoop seeds out.
  • Spray cut side lightly with avocado oil and season with your choice of seasonings and salt and pepper.
  • Roast for about 30-40 minutes
  • While roasting, in a pan sautรฉ onions until translucent.
  • Once onions are done, add the ground beef and cook until no pink. Season with taco seasoning and salt and pepper to taste.
  • Add the rotel, black beans and cauliflower rice. Mix until hot. Add the cilantro.
  • Once acorn squash is cooked, fill with equal parts into the middle ( 4 halves )
  • Sprinkle the cheese over and place back into the oven until melted
  • Serve with your choice of toppings and enjoy

Ingredients

  • Romaine lettuce Chopped
  • 2 TBSP Bolthouse yogurt Caesar dressing
  • 2 TBSP Non fat greek yogurt
  • 1/4 Cup FF Mozzarella
  • 1/4 Cup Red onions sliced thin
  • 1 Bag Shrewd foods Sour Cream & Onion Puffs or croutons of your choice
  • 1/4 Pound Rotisserie chicken White meat only , no skin
  • Fresh cracked black pepper to taste

Instructions

  • First mix the 2 TBSP dressing with the 2 TBSP yogurt and set aside
  • Now what I like to do is, take a gallon size ziploc bag and dump everything inside the bag except the chicken unless you'd like that coated with dressing as well.
  • Once everything is inside ( Including the dressing ) Seal the bag and shake shake shake until every piece of lettuce is coated
  • Once done, dump into a bowl, add some fresh cracked black pepper to taste and enjoy!
