BBQ Turkey Meatloaf with Palmini

 2 lbs Ground lean turkey93/7
 1 Cup Palmini hearts of palm ricedDrained, rinsed & squeezed dry
 1 Cup quick oats - blendedThe 1 cup is prior to blending
 ½ Cup grated parmesan cheeseI use Cello brand
 ½ Cup nonfat Greek yogurt
 2 EggsBeaten
 1 Small onionDiced fine
 1 tbsp Minced garlic
 ¾ Cup no sugar added ketchupI use Primal Kitchen brand
 2 tbsp Worcestershire sauce
 ½ tbsp Italian seasoning
 ½ tbsp Dak's Spices Italian Blastoptional
 Salt to taste
 Black pepper to taste
TOPPING
 ¼ Cup no salt added tomato sauce
 ¼ Cup sugar free BBQ sauceI use G Hughes brand

  1. Preheat the oven to 375 degrees
  2. In a large bowl combine the following ingredients: 
    1. Ground turkey
    2. Drained, rinsed and SQUEEZED out heart of palm
    3. Blended oats
    4. Parmesan cheese
    5. Nonfat Greek yogurt
    6. Beaten eggs
    7. Diced onion
    8. Minced garlic
    9. Ketchup
    10. Worcestershire sauce
    11. Italian seasoning
    12. Dak's Spices Italian Blast seasoning
    13. Salt and pepper to taste
  3. Mix until combined, DO NOT OVER MIX!
  4. Place mixture into a parchment lined cast iron pan or casserole dish
  5. Distribute evenly
  6. Pour the tomato sauce & BBQ sauce mixture over the top
  7. Brush until coated
  8. Place into the oven for about 60-80 minutes or until internal temperature is 165 degrees
    1. Place under the broiler for a few minutes for a crispier top and edges (optional)
  9. Remove and let rest for about 10 minutes befores serving
