Mini Banana Muffins – Kid Friendly

 4 BananasSUPER ripe preferred
  cup ButterMelted
 ½ cup Sugar
 1 tsp Vanilla extract
 ½ tsp Baking soda
 1 pinch Salt
 1 ½ cups Flour
Equipment needed
 Oven
 Mixing bowls
 Mini muffin pan
 Cookie Scoop
Preheat the oven

  1. Preheat the oven to 350 degrees
  2. Grease a mini muffin tin or line it with mini muffin liners.

Mash the bananas

  1. In a mixing bowl, mash the 3-4 ripe bananas until smooth. If youโ€™re using frozen bananas, make sure theyโ€™re fully defrosted before mashing.
Mix the wet ingredients

  1. Add the 1/3 cup of melted butter, 1 tsp vanilla extract, 1/2 cup of sugar, and the 1 beaten egg to the mashed bananas. Stir until well combined.
Add the dry ingredients

  1. Sprinkle the 1/2 tsp baking soda and a pinch of salt over the banana mixture, then add the 1 1/2 cups of flour. Gently fold the ingredients together until just combinedโ€”donโ€™t overmix!
Scoop into muffin tin

  1. Using a spoon or small cookie scoop, fill each mini muffin cup about 3/4 full.

Bake

  1. Bake for 12-15 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
Cool and enjoy

  1. Allow the muffins to cool for a few minutes in the tin before transferring them to a wire rack to cool completely.
