Tuna Bowl with Palmini Rice

Yields1 Serving

 1 Bag of Palmini hearts of palm rice styleDrained & rinsed
 Salt to taste
 Pepper to taste
 1 drizzle Sesame oilOptional
 3 tbsp Scallionsthinly sliced
 5 oz Wild Planet albacore tuna Do not drain can
 1 tsp Fresh lemon
 ¼ cup Good Culture 2% cottage cheeseWhipped
 ½ Small avocado
 ¼ cup Grape tomatoesSlice in half
 3 tbsp Red onionsthinly sliced
 ½ Mini cucumberthinly sliced
 Wasabi optional
 Sesame seeds to garnishopitional
 Hot sauce to garnishoptional

    1. Take the cottage cheese and place into a blender, blend until smooth creating whipped cottage cheese
    2. Pour back into the container and set aside
    3. Drain and rinse the Palmini rice very well
    4. Heat a pan to meadium heat
    5. Spray lightly with avocado oil
    6. Add the Palmini rice
    7. Lower to low heat and let sit in the pan for about 5 minutes creating a less moist rice
    8. Season to taste with salt, pepper, Asian seasoning (if you have it)
    9. Drizzle a tiny bit of sesame oil (optional) and add the scallions
    10. Cut the heat and let cool offย 
    11. In a separate bowl, add the can of tuna (do not drain Wild Planet brand), fresh squeeze of lemon juice, whipped cottage cheese, garlic powder, onion powder, salt and pepper
    12. Mix until combined
    13. Once the rice has cool a little place into a bowl
    14. Add the tuna, sliced cucumber, tomatoes, sliced onions and avocado
    15. Add wasabi (optional) and garnish with sesame seeds and hot sauce (optional)
