Summer Peach Salad With Air Fried Chicken And Raspberry Vinaigrette
Right now is the perfect time to enjoy peaches! They are in season and are absolutely delicious. I love my peaches as is, grilled, baked or just tossed into a delicious salad. I air fried the chicken with some amazing spices and while that was air frying I put this easy yet so delicious salad together in minutes.
2TBSPG Hughes sugar free raspberry vinaigrette or dressing of your choice
Fresh chivesto garnish
Instructions
First season the chicken with salt, pepper and Dan-O's Original seasoning or seasonings of your choice
Spray either the chicken or air fryer basket with cooking spray to prevent sticking while chicken is air frying.
Air fry at 400 for about 12-15 minutes or until internal temperature reaches 165 degrees. Set aside and rest while the rest of the salad is being assembled
Peel the peaches, and slice up into desired sizes. Make sure to remove pits.
In a large bowl place the greens, sliced onions, peaches, mini cucumbers , gorgonzola . Slice up the chicken after it rests for about 10 minutes
I just grabbed a store bought raspberry dressing . I love the G Hughes sugar free raspberry vinaigrette or dressing of your choice
Garnish with fresh chives
