Preheat your oven to 400 degrees
First get your potatoes cooked. I usually peel, place in cold water on stove, bring to boil add salt to boiling water and cooked until fork tender. Strain and then mash
While potatoes are cooking spray your pan ( I used my cast iron ) with some avocado oil spray and saute the onions until translucent
Add your ground beef, seasonings and cook until browned
Once potatoes are cooked and mashed, add half & half, chicken broth, garlic salt & butter. Season with more salt & pepper to taste. You can use a hand mixer, hand masher or put in and stan up mixer
Mix the corn and peas together and pour over the beef and onion mixture.
Once potatoes are done and nice and fluffy, scoop it on top of the peas and corn mixture
Bake for about 15-20 minutes
While that is in the oven, get your gravy ready. Follow packet instructions
Once the shepherds pie is done baking in the oven, spray top with some spray butter and place back into the oven for about 10 minutes. If you;d like more brown & crispy on the top, turn on low broil
Drizzle gravy on top and garnish with parsley
