Pumpkin Spice Cake With Brown Sugar Center & Pumpkin Maple Glaze

  • 1 Box Sugar free yellow cake mix I used Pilsbury yellow cake mix
  • 1/2 Cup Unsweetened applesauce
  • 1/2 Cup Non fat plain greek yogurt
  • 1 tsp Vanilla
  • 4 Eggs Sub egg beaters for less points if on WW green plan
  • 3/4 Cup Pure pumpkin puree no pumpkin pie mix
  • 2 1/2 tsp Dak's Pumpkin spice
  • Pinch of salt
  • 1/3 Cup Brown sugar substitute Or use regular but check WW points


  • 1/3 Cup Confectioners sugar replacement Or regular just check WW points
  • 1 TBSP Pure pumpkin puree
  • 1 TBSP Sugar free pancake syrup or pure
  • Splash of cashew milk If needing to loosen


  • Spray 9x13 pan with cooking spray and set aside
  • Preheat oven to 350
  • In a bowl: Cake mix, pumpkin puree, unsweetened applesauce, yogurt , eggs, pumpkin spice and salt.
  • Beat with hand mixer on medium speed for 2 minutes
  • Pour half the batter into the pan. Sprinkle the brown sugar over layer then pour remaining batter over brown sugar.
  • Bake for 35-40 minutes or until toothpick comes out clean
  • Mix up the confectioners sugar, vanilla, 1T pumpkin puree, maple syrup and splash of cashew milk ( if needed to loosen )
  • Immediately pour glaze over the hot cake
  • Cut into 12 once cooled and top with your choice of toppings or leave as is.
