First get the water going for your pasta
Next, season chicken to your liking and cook until 165 degrees. Set aside until ready to eat. I cooked mine in my air fryer at 380 degrees for about 10-12 minutes.
In a mini food processor add the roasted red peppers and cottage cheese. Set aside.
In a small sauté pan, spray bottle with avocado oil. Add the shallots and cook until translucent Add the garlic and cook for an additional 30 seconds.
Add the tomato paste and seasonings.
Alternating a little at a time. add the pasta water, chicken bone broth and roasted red pepper sauce. Adding slowly so the sauce doesn't break.
Season to taste with salt, pepper an additional seasoning if needed.
Add the laughing cow wedge and pasta. Fold in until melting and mixed all together.
Plate and add chicken and broccoli
Garnish and enjoy
