Broccoli & Cheese jumbo Egg Bites

  • 1 Blender or food processor
  • 1 Texas size muffin pan



  • 2/3 Cup Egg whites I use Costco brand
  • 1/2 Cup Good Culture cottage cheese or cottage cheese of your choice
  • 1/2 Cup fat free cheddar cheese or cheese of your choice
  • 1/8 Pinch Dak's Spices Green Zest or seasoning of your choice
  • 1/8 tsp Dak's Original Red or seasoning of your choice
  • 1/8 tsp Dano's original seasoning
  • Salt to taste
  • Pepper to taste


  • 1 Cup Cooked broccoli chopped
  • Scallions chopped


  • In the blender or food processor add the egg whites, cottage cheese, fat free cheese (leave 1 TBSP of cheese to the side) and seasonings into the blender.
  • Spray the cupcake pan with cooking spray
  • Pour the batter into cupcake pan, evenly
    *If using a mega muffin pan, it will make 3*
    *If using a standard muffin pan it will make 4-5
  • Place the chopped broccoli into egg mixture.
  • Top the egg mixture with remaining cheese and scallions
  • Bake at 350 degrees for 15-20 minutes
    *Mega = 20 minutes, Standard 15-20 minutes*
  • Let cool before removing for 5 minutes


Makes 3 JUMBO bites or 4-5 standard size
