Equipment

  • 2 Large mixing bowl
  • Knife
  • Cutting board
  • Grater or zester
  • Pot to cook pasta

Ingredients

  • 1 Box Barilla Protein+ Rotini Pasta or pasta of your choice
  • 20 ounces Cooked chicken, chopped I use a rotisserie chicken
  • 300 grams Bolthouse Caesar dressing or 1 cup
  • 330 grams Whipped cottage cheese see directions
  • 1/2 cup Nonfat Greek yogurt
  • 40 grams Grated parmesan cheese
  • 60 grams Shaved parmesan cheese
  • 6 Cups Romaine Chopped
  • 1/2 TBSP Dried oregano
  • 1 tsp Onion powder
  • 2-3 Garlic cloves grated
  • Salt to taste
  • Black pepper to taste

Instructions

WHIPPED COTTAGE CHEESE

  • In a food processor or mini blender, add the cottage cheese and blend until a smooth whipped consistency. set aside.

PASTA SALAD PREP

  • Cook the pasta according to the instructions
  • Rinse with cold water to stop the cooking process
  • Once cooled off place into a large mixing bowl
  • Chop the chicken into small pieces and add to the bowl
  • Add the remaining ingredients besides the romaine
  • Once ready to serve, add the lettuce or add the lettuce per serving to prevent the lettuce from getting soggy
