Crockpot White Chicken Chili - UPDATED RECIPE

Ingredients

Charred Corn

  • Avocado oil spray
  • 1 15.25 oz. can Corn, no salt added drained
  • salt & pepper to taste

Chili Ingredients

  • 2 pounds Chicken breast
  • 1 small onion diced
  • 2 TBSP Garlic minced
  • 1 10 oz. can Green enchilada sauce
  • 1-2 4 oz. can Green chiles
  • 1 15.5 oz. can Northern white beans drained and rinsed
  • 1 15.5 oz. can Cannellini beans drained and rinsed
  • 1 15.5 oz. can Pinto beans drained and rinsed
  • 2 cups Chicken bone broth
  • 2/3 cup Evaporated milk
  • 1 TBSP Cumin
  • 1 TBSP Chili powder
  • 1 tsp Oregano
  • 1 tsp Paprika
  • 1/2 tsp Cayenne optional
  • Salt and pepper to taste

Garnish

  • 1/2 cup Cilantro chopped (optional)
  • 1 lime juiced

TOPPINGS (optional)

  • Salsa
  • Whipped cottage cheese or nonfat Greek yogurt
  • Shredded cheddar cheese
  • Crushed tortilla chips
  • Avocado slices or guacamole
  • Hot sauce

Instructions

Charred corn

  • In a cast iron pan or saute pan, spray lightly with avocado oil and heat to medium
  • Drain the can of corn and add to the pan
  • Cook the corn and let the corn char then season with salt and pepper to taste

Chili Steps

  • Add all of the chili ingredients into the crockpot
  • Mix lightly and set to low for 6-8 hours
  • Remove the chicken, shred and add back into the crockpot
  • Add the fresh lime juice and cilantro
  • Let sit for about 10 minutes then serve and garnish with your desired toppings
