Instructions
Charred corn
In a cast iron pan or saute pan, spray lightly with avocado oil and heat to medium
Drain the can of corn and add to the pan
Cook the corn and let the corn char then season with salt and pepper to taste
Chili Steps
Add all of the chili ingredients into the crockpot
Mix lightly and set to low for 6-8 hours
Remove the chicken, shred and add back into the crockpot
Add the fresh lime juice and cilantro
Let sit for about 10 minutes then serve and garnish with your desired toppings
