Roasted Maple Delicata Squash with Whipped Herb Goat Cheese

Ingredients

  • 2 medium Delicata squash
  • 1 TBSP Avocado oil
  • 1/4 cup Maple syrup or sugar free pancake syrup
  • 1/2 tsp Onion powder
  • 1/2 tsp Garlic power
  • 1/8 tsp Paprika
  • 1/4 tsp Cinnamon
  • Salt to taste
  • Pepper to taste

WHIPPED HERB GOAT CHEESE

  • 4 oz Goat cheese
  • 2-3 TBSP Fat free Fairlife milk
  • 2 tsp Dried chives
  • 2 tsp Dried parsley
  • 1/2 tsp Onion power
  • 1/2 tsp Garlic powder
  • Salt to taste
  • Pepper to taste

Instructions

  • preheat the oven to 450 degrees
  • Slice the delicata in half (lengthwise) and scoop the seeds out
  • Slice the delicata into half moons
  • Place the squash into a bowl
  • Add the avocado oil, maple syrup, onion powder, garlic powder, paprika, cinnamon and season to taste with salt and pepper
  • Line the sheet pan with parchment paper and place into the oven for 10-15 minutes or until fork tender
  • Remove and let cool
  • In a small food processor add all the ingredients of the whipped goat cheese and blend until smooth
  • Add more milk if desired to make a more loose consistency
  • Drizzle over the squash and enjoy
