Protein Spinach & Artichoke Dip
Ingredients
- 1 small Onion Diced fine & sauteed
- 1 TBSP Minced garlic sauteed with onion
- 8 oz Light cream cheese room temperature
- 1 cup Whipped cottage cheese see notes
- 10 oz Bag of frozen spinach thawed and squeeze liquid
- 12-14 oz Jar of artichokes drained & chopped
- 1 cup Grated parmesan
- 1/2 tsp Onion powder
- 1/2 tsp Garlic powder
- Salt to taste
- Black pepper to taste
- Red pepper flakes optional
- 1 cup Shredded mozzarella
- Jarred jalapeno optional
Instructions
- Preheat the oven to 375 degrees
- In a sautรฉ pan, cook the onion until translucent then add the garlic and cook for about 1 minutes, remove and set aside to cool.
- In a bowl add the cream cheese, whipped cottage cheese, spinach, artichokes, grated parmesan, onion powder, garlic powder, sauteed onions and garlic, salt to taste, black pepper to taste and red pepper flakes to taste
- Mix well and place into a casserole dish
- Add the shredded mozzarella on top with jalapeno slices (optional)**Jalapenos can also be added into the dip mix instead**
- Cover with foil and bake for 20-30 minutes or until nice and bubbly around the edges
- Broil for a few minutes if desired for golden top
Notes
- Place the cottage cheese into a mini food processor or blender
- Blend until smooth and place back into the container
