Black-Eyed Pea Salad

A great side dish for taco Tuesday or the next side to bring to a BBQ or party.

  • Large bowl

Ingredients

  • 2 Cans Black-eyed peas Drained & rinsed
  • 1 Red bell pepper Diced
  • 1 Green bell pepper Diced
  • 1/2 Red onion Diced
  • 1 TBSP Garlic minced
  • 8 ounces Grape tomatoes halved
  • 1 Avocado Cubed
  • 1/2 Lime Juiced
  • 1 tsp Avocado oil
  • 1 tsp Cumin
  • 1 tsp Paprika
  • 1/4 Cup Cilantro chopped
  • Black pepper to taste
  • Salt to taste

Instructions

  • Drain and rinse black-eyed peas. Place into large bowl.
  • Dice peppers and onions. Place into the bowl.
  • Cube avocado and place into the bowl.
  • Halve the grap tomatoes and place into the bowl.
  • Add the minced garlic, chopped cilantro, cumin, paprika and lime juice
  • Season to taste with salt and pepper
