Chicken Caesar Smashed Tacos

This recipe takes everything you love about a classic Caesar salad and combines it with juicy seasoned chicken and a crispy tortilla (or homemade skinny pizza dough shell) to create a meal that's perfect for lunch, dinner, or meal prep.

Ingredients

CHICKEN MIXTURE

  • 1 pound Ground chicken I used 92/8 percent
  • 1/3 cup Grated parmessan cheese
  • 1/2 TBSP Garlic powder
  • 1/2 TBSP Onion powder
  • 1 TBSP Oregano
  • 1/2 TBSP Paprika
  • Salt to taste
  • Black pepper to taste

TACO SHELLS

  • 8 Mission zero net carb street taco flour tortilla or make own naan

DRESSING

  • 1/2 cup Nonfat Greek yogurt
  • 1/2 cup Bolthouse Creamy Caesar dressing

TOPPINGS

  • 1 cup Trader Joe's lite shredded mozzarella cheese
  • 3 cups Romaine lettuce shredded
  • Grated Parmessan cheese to garnish

Instructions

  • In a mixing bowl, combine the ground chicken with the Parmesan cheese and seasonings. Mix until everything is evenly incorporated.
  • Divide the chicken mixture evenly into portions.
  • Place a mini tortilla (or prepared naan) on a flat surface and press one portion of the chicken mixture into a thin, even layer across the surface.
  • Preheat a griddle, Blackstone, or large skillet over medium-high heat.
  • Place the naan chicken-side down onto the hot cooking surface. Press gently to ensure good contact with the griddle.
  • Cook until the chicken develops a golden-brown crust and releases easily from the surface.
  • Flip and continue cooking until the chicken is fully cooked through and the naan becomes lightly crisp with golden brown spots.
  • While the chicken cooks, combine the shredded romaine, Greek yogurt, and Caesar dressing in a bowl. Toss until the lettuce is evenly coated.
  • Once the smash tacos are cooked, sprinkle mozzarella cheese over the hot chicken and allow it to melt.
  • Remove from the griddle and top with the Caesar romaine mixture.
  • Finish with a generous sprinkle of grated Parmesan cheese and freshly cracked black pepper if desired.
  • Serve immediately and enjoy!
