Drain Palmini extremely well. Press between paper towels to remove as much moisture as possible. This is key for crispiness.
In a bowl, combine Palmini, turkey bacon, cheddar, egg, egg whites, oats, cornstarch, scallions, and seasonings. Mix until fully combined.
Form into 8 small pancakes and lightly spray both sides with cooking spray.
Cook in the Ninja CRISPi on the Mac Crisp setting for 10 minutes, flipping halfway through.
Let rest 2–3 minutes after cooking so they firm up and finish crisping.
Top with some nonfat Greek yogurt or sour cream and some additional scallions
Season again to taste with salt and pepper
