Garlic Herb Turkey Bacon Egg Bites (Instant Pot)

Equipment

  • Blender or food processor
  • Instant pot
  • Instant pot trivet
  • Instant pot egg mold
  • Foil

Ingredients

  • 6 Turkey bacon slices chopped very small
  • 5 Whole eggs
  • 4 Happy Farms Garlic & Herb spreadable cheese wedges or light laughing cow wedges
  • 1/2 cup 2% Good Culture cottage cheese or cottage cheese of choice
  • 1/4 cup unsweetened almond milk
  • 1/2 tsp Garlic powder
  • 1/2 tsp Onion powder
  • 1/2 tsp Dried oregano
  • Salt to taste
  • Black pepper to taste

Instructions

  • Chop the turkey bacon into small pieces
  • Place into a lightly greased pan
  • Cook until super crispy and set aside on a piece of paper towel
  • In the blender or food processor add the remaining ingredients
  • Blend until smooth
  • Add 1 TBSP of crispy turkey bacon onto the bottom of each egg bite mold
  • Pour 4 TBSP of the egg mixture into each mold on top of the turkey bacon
  • Cover the mold with foil
  • Pour 2 cups of water to the bottom of the Instant Pot followed by the trivet
  • Place the egg bite mold on top of the trivet
  • Set the Instant Pot to steam for 8 minutes
  • Once the4 8 minutes is done, let them sit for an additional 10 minutes
  • Remove the lid, take the trivet out carefully with the egg bite mold
  • Remove the foil and enjoy!
