High Protein Cinnamon Puff with Protein Drizzle

It’s fluffy, sweet, loaded with cinnamon and finished with the easiest creamy protein drizzle. The entire thing packs almost 50 grams of protein, which makes it such a fun way to switch up breakfast, a post-workout meal or even something sweet when you’re trying to hit your protein goals.

Equipment

  • Stand mixer or electric hand mixer
  • Baking pan I use a 9x9
  • Parchment paper
  • Cooking spray

Ingredients

CINNAMON PROTEIN PUFF

  • 1 cup Egg whites I do 3/4 c liquid & 1/4 c fresh egg whites **OPTIONAL**
  • 1 tsp Cornstarch
  • 6 packets Stevia
  • 1` splash Vanilla
  • Cinnamon

PROTEIN DRIZZLE

  • 1 scoop Protein powder Best one HERE with 23g Protein per scoop
  • water

GARNISH

  • Protein drizzle from above
  • Cinnamon
  • Pinch Salt

Instructions

  • Preheat your oven to 400°F.
  • Line your baking pan with parchment paper and lightly spray the parchment with cooking spray.
  • Pour the egg whites into the bowl of a stand mixer fitted with the whisk attachment.
  • Turn the mixer to its highest setting and whip the egg whites for approximately 5–10 minutes.
  • The exact amount of time will vary, so watch the egg whites rather than the clock.
  • You are looking for a HUGE increase in volume and, most importantly, stiff peaks.
  • When you lift the whisk attachment, the egg whites should hold their shape instead of collapsing back into the bowl.
  • Once stiff peaks have formed, remove the bowl from the stand mixer.
  • FOLD. DO NOT STIR.
    Add:
    3 packets stevia, cornstarch, a generous amount of cinnamon and a splash of vanilla
  • Using a spatula, very gently fold everything into the egg whites.
  • You don't want to knock all of that beautiful air out of the egg whites.
  • Once incorporated, add the remaining:
    3 packets stevia and ,more cinnamon
  • Gently fold again just until combined.
  • Carefully transfer the whipped egg-white mixture into your prepared pan.
  • Lightly shape the mixture into an even mound.
  • Bake at 400°F for approximately 12–13 minutes.
  • While your protein cloud is baking, make the drizzle.
  • Place 1 scoop of your favorite protein powder into a small bowl.
  • ADD THE WATER VERY, VERY SLOWLY.
    **about approximately 1/4 teaspoon at a time.**
  • Stir after each addition until the protein powder turns into a thick, smooth drizzle.
  • Depending on the protein powder you use, the exact amount of water needed will vary.
  • Remove the protein cloud from the oven and drizzle that creamy protein mixture all over the top.
  • Finish with:
    More cinnamon and a tiny pinch of salt
