High Protein KFC Fake Out Bowl (Low Calorie Comfort Food)

Equipment

Ingredients

  • 1 packet Palmini hearts of palm mashed (regular or roasted garllic)
  • 1 cup Regular plain mashed potatoes salt & pepper only
  • 2 TBSP Roasted garlic
  • 1/2 cup Kraft fat free cheddar cheese
  • 1/2 cup canned corn no salt
  • 1/4 cup unsweetened almond milk
  • 1 cup homemade gravy recipe below
  • 1 1/2 cups Blackened chicken recipe HERE or chicken of choice

Homemade Gravy

  • 1 1/2 cups Low sodium chicken broth
  • 2 tsp chicken seasoning
  • Slurry 1 TBSP cornstarch & 2 TBSP water mixed together

Instructions

  • In a small saucepan, bring chicken broth to a low boil. Slowly add cornstarch slurry (equal parts cornstarch + water) until thickened. Season with salt, pepper, and chicken seasoning.
  • Boil the mashed potatoes and season with salt & pepper.
  • In a saucepan, combine mashed potatoes, the packet of mashed Palmini hearts of palm, roasted garlic, cheese, and almond milk. Mix until fully combined and melted
  • Assemble the bowl: start with the Palmini mash mixture, add gravy, corn, chicken, a little more cheese, and finish with more gravy.
