If you’ve seen the Viral Doner Kebab floating around, you already know… it looks complicated. But I’m here to tell you — it’s actually one of the easiest ways to make homemade gyro meat at home. Just parchment paper, a rolling pin, and your oven. This version is made with lean ground beef, loaded with warm Mediterranean spices, and perfect for meal prep, wraps, bowls, or high-protein plates.

Add the white onion, red onion, and garlic cloves to a mini food processor. Blend until it reaches a pulp consistency. This is what gives the meat that authentic, juicy gyro texture.
In a large bowl, combine:Ground beefOnion-garlic mixtureAll seasoningsMix thoroughly until fully combined
Divide the beef mixture into 4–5 portions (like large meatballs).Place one portion onto parchment paper.Top with another sheet of parchment.Use a rolling pin to roll it into a very thin layer.Remove the top parchment and begin tightly rolling/folding the beef using the parchment paper — almost like wrapping paper. This creates that layered doner effect.Repeat with remaining portions.
Place the rolled beef logs onto a sheet pan. Add roasting veggies if desired — peppers, onions, zucchini are all great options.Bake at 400°F for 30 minutes.Let rest slightly before slicing thin.
