Homemade Doner Kebab Gyro Meat

If you’ve seen the Viral Doner Kebab floating around, you already know… it looks complicated.
But I’m here to tell you — it’s actually one of the easiest ways to make homemade gyro meat at home. No rotisserie. No fancy equipment. Just parchment paper, a rolling pin, and your oven.
This version is made with lean ground beef, loaded with warm Mediterranean spices, and perfect for meal prep, wraps, bowls, or high-protein plates.

Ingredients

  • 1 pound Ground Beef 93/7 or 96/4
  • 1/4 White onion
  • 1/4 Red onion
  • 4 Garlic cloves
  • 1 tsp Paprika
  • 1 tsp Lemon pepper seasoning
  • 1 tsp Dried oregano
  • 1/2 tsp Onion powder
  • 1/2 tsp Garlic powder
  • 1/2 tsp Coriander
  • 1-2 dashes Cinnamon
  • Salt and pepper to taste

Instructions

  • Add the white onion, red onion, and garlic cloves to a mini food processor. Blend until it reaches a pulp consistency. This is what gives the meat that authentic, juicy gyro texture.
  • In a large bowl, combine:
    Ground beef
    Onion-garlic mixture
    All seasonings
    Mix thoroughly until fully combined
  • Divide the beef mixture into 4–5 portions (like large meatballs).
    Place one portion onto parchment paper.Top with another sheet of parchment.Use a rolling pin to roll it into a very thin layer.
    Remove the top parchment and begin tightly rolling/folding the beef using the parchment paper — almost like wrapping paper. This creates that layered doner effect.
    Repeat with remaining portions.
  • Place the rolled beef logs onto a sheet pan. Add roasting veggies if desired — peppers, onions, zucchini are all great options.
    Bake at 400°F for 30 minutes.
    Let rest slightly before slicing thin.
