Ingredients

  • 2 pounds Carrots washed, peeled and cut evenly

GLAZE INGREDIENTS

  • 2 TBSP Balsamic vinegar
  • 2 TBSP Avocado oil or olive oil
  • 1 TBSP Honey or agave
  • 2 tsp ground cinnamon
  • 1 tsp Thyme
  • 1 tsp Rosemary
  • 1 tsp Oregano
  • 1 tsp Garlic powder
  • 1 tsp Onion powder
  • 1/2 tsp Paprika
  • ground nutmeg
  • 1 tsp Salt
  • 1/2 tsp Black pepper

GARNISH

  • Goat cheese
  • Parsley
  • Flaky sea salt

Instructions

  • Preheat the oven to 400 degrees
  • Wash, peel and cut the carrots into large chunks on a diagonal for a more fancy look if desired
  • Place the carrots onto the parchment lined sheet tray, spray lightly with avoacdo oil and sprinkle with salt and pepper
  • Place in the over and roast for about 15 minutes
  • In a small bowl add the glaze ingredients and mix until comined
  • After roasted carrots in the oven for the 15 minutes, remove and pour the glaze all over
  • Mix up until combined and all carrots are coated
  • Place back into the oven until carrots are fork tender. Mix half-way through
  • Once carrots are done, remove, add the goat cheese and garnish with parsley and flaky sea salt
