Lemon Herb Roasted Turkey Tenderloin

A beautiful way to enjoy a delicious turkey tenderloin either for the holidays or for a week day meal!

Equipment

  • Cast Iron pan or oven safe casserole dish or pan

Ingredients

  • 24 ounces Turkey tenderloin
  • Salt
  • Pepper
  • 1/2 Cup Grain mustard
  • 1 TBSP Honey
  • 1 tsp Garlic powder
  • 1 tsp Onion powder
  • 1 tsp Dried oregano
  • 1 TBSP Dried rosemary
  • 1/2 Cup Fresh parsley Chopped fine
  • 1/4 Cup Fresh lemon zest
  • 1 TBSP Grated parmesan to garnish, optional

Instructions

  • Preheat the oven to 400 degrees.
  • Pat the tenderloins dry with a paper towel.
  • Place the tenderloin into a lightly greased cast iron pan or oven safe casserole dish or pan.
  • Season both sides of the tenderloin with salt and pepper.
  • In a bowl mix the grain mustard and honey until combined.
  • Brush both sides of the tenderloin with the mustard/honey mustard mixture.
  • Sprinkle the seasonings (onion powder, garlic powder, dried oregano and dried rosemary) on both sides of the tenderloin.
  • Chop up the fresh parsley and press into the tenderloin on both sides.
  • Add the fresh lemon zest to the top of the tenderloins.
  • Place into the oven until the tenderloins read 165 degrees.
  • Remove and let the tenderloins rest for about 10 minutes before slicing.
  • Garnish with some grated parmesan (optional).
  • Serve and enjoy!
