This Loaded Tuna Protein Bowl is loaded with fresh, crunchy veggies, tons of protein, and so much volume for under 400 calories. The entire recipe is technically ONE serving, and yes, I have absolutely eaten the whole thing for one meal. 😂

Ingredients

  • 200 grams English seedless cucumber sliced very thin
  • 50 grams Shredded carrots
  • 20 grams Red onions sliced thin
  • 15 grams Scallions sliced thin
  • 200 grams Shredded lettuce Iceberg
  • 100 grams Peas I use frozen then defrost
  • 170 grams Safe Catch Tuna or brand of choice

Instructions

  • Thinly slice the English cucumber using a mandolin or a sharp knife.
  • Add the cucumber, shredded carrots, thinly sliced red onion, scallions, shredded iceberg lettuce, and defrosted peas to a large bowl.
  • Drain the tuna well and add it to the bowl.
  • Toss everything together until evenly combined.
  • Drizzle yellow mustard all over the top, if desired, and mix again before serving.
  • Enjoy the entire bowl as one large, high-protein meal, or divide it into two portions for two lighter lunches.
