Mexican Style Feta Fried Eggs on Pitas

  • Avocado oil spray

Ingredients

  • Avocado oil spray
  • 2 Flax, oat bran, & whole wheat pita bread Aldi brand or Joseph's brand
  • Garlic salt
  • 1/2 Cup Fat free refried beans
  • Garlic powder to taste
  • Onion powder to taste
  • Dak's Spices Taco Knight
  • 90 grams Theos fat free feta
  • 2 Medium Eggs
  • Salt to taste
  • Pepper to taste

TOPPINGS

  • 1/4 Cup White or red onion diced
  • 2 TBSP Wickle's spicy red sandwich spread Click HERE for Amazon link

GARNISH

  • 2 TBSP Cilantro Optional

Instructions

  • In a medium heated pan spray with avocado oil
  • Add the pita and spray pita with avocado oil and sprinkle with garlic salt
  • Toast both sides of both pitas and set aside
  • Turn the heat off and spray again with avocado oil
  • Make two piles with the feta cheese and make a well with spoon in the center for each egg to go
  • Crack each egg into the feta well
  • Season with salt, pepper and Dak's Spices Green Zest
  • Turn the heat back on to low and take a little water, add to the pan then cover with the lid
  • Take the refried beans and season with garlic powder, onion powder and Dak's Taco Knight.
  • Smear between the two pitas
  • Once the eggs are done and feta is nice and golden brown on the bottom add each egg to each pita
  • Add remaining toppings (onion and sandwich spread)
  • Garnish with cilantro and enjoy
