One Dish Taco Chicken & Rice Power Bowls

Equipment

  • Oven safe containers

Ingredients

  • 1 1/4 cups Jasmine dry
  • 2 1/2 cups Chicken bone broth
  • 5 TBSP Nonfat Greek yogurt
  • 1 1/4 cups Black beans
  • 1 1/4 cups Pinto beans
  • 1 1/4 cups Corn (no salt added)
  • 1 1/4 cups Grape tomatoes sliced in half or quartered
  • 25 oz. Chicken breast cut into 1" chunks
  • 1 packet Low sodium taco seasoning
  • 1 tsp Garlic powder
  • 1 tsp Onion powder
  • Salt to taste
  • Black pepper to taste
  • 1 1/4 cups Trader Joe's lite 2 cheese blend or cheese of choice
  • Cilantro to garnish

Instructions

  • Preheat oven to 375°F
  • Divide all ingredients evenly into 5 oven-safe containers
  • Mix everything together in each container
  • Add seasoned chicken evenly
  • Bake for 25 minutes
  • Open oven and ddd cheese to each
  • Bake another 5 minutes until melted
  • Let sit a few minutes before eating
