Ingredients

  • 6 cups sweet potatoes, cut into 1-inch cubes
  • 3 cups broccoli florets
  • 1/2 cup multi-colored bell peppers diced
  • 1/2 small red onion thinly sliced
  • 4 oz feta cheese crumbled

Seasonings for sweet potatoes & broccoli

  • Avocado oil spray
  • Onion powder to taste
  • Garlic powder to taste
  • Paprika to taste
  • salt/pepper to taste

Dressing

  • 1/2 cup nonfat Greek yogurt
  • Juice of 1/2 a lime
  • 2 tsp Dijon mustard
  • 2 tsp Honey
  • 1 TBSP Apple cider vinegar
  • 2 TBSP Roasted garlic
  • 3 TBSP Cilantro chopped fine
  • Salt to taste
  • Pepper to taste

Instructions

  • Preheat your oven to 425°F.
  • Arrange the sweet potatoes and broccoli on separate baking sheets. Lightly spray with avocado oil and season generously with onion powder, garlic powder, paprika, salt, and pepper.
  • Roast for 25–35 minutes, flipping halfway through, until fork tender and lightly caramelized around the edges.
  • Allow the vegetables to cool for about 10 minutes.
  • While the vegetables cool, whisk together the Greek yogurt, Dijon mustard, lime juice, honey, apple cider vinegar, cilantro, roasted garlic, salt, and pepper until smooth and creamy.
  • In a large serving bowl, combine the roasted sweet potatoes, broccoli, bell peppers, red onion, and feta cheese.
  • Pour the dressing over the salad and gently toss until everything is evenly coated.
  • Serve immediately or refrigerate until chilled. The flavors become even more delicious after a few hours in the refrigerator!
