- 6 cups sweet potatoes, cut into 1-inch cubes
- 3 cups broccoli florets
- 1/2 cup multi-colored bell peppers diced
- 1/2 small red onion thinly sliced
- 4 oz feta cheese crumbled

- Avocado oil spray
- Onion powder to taste
- Garlic powder to taste
- Paprika to taste
- salt/pepper to taste
Dressing
- 1/2 cup nonfat Greek yogurt
- Juice of 1/2 a lime
- 2 tsp Dijon mustard
- 2 tsp Honey
- 1 TBSP Apple cider vinegar
- 2 TBSP Roasted garlic
- 3 TBSP Cilantro chopped fine
- Salt to taste
- Pepper to taste

Preheat your oven to 425°F.
Arrange the sweet potatoes and broccoli on separate baking sheets. Lightly spray with avocado oil and season generously with onion powder, garlic powder, paprika, salt, and pepper.
Roast for 25–35 minutes, flipping halfway through, until fork tender and lightly caramelized around the edges.
Allow the vegetables to cool for about 10 minutes.
While the vegetables cool, whisk together the Greek yogurt, Dijon mustard, lime juice, honey, apple cider vinegar, cilantro, roasted garlic, salt, and pepper until smooth and creamy.
In a large serving bowl, combine the roasted sweet potatoes, broccoli, bell peppers, red onion, and feta cheese.
Pour the dressing over the salad and gently toss until everything is evenly coated.
Serve immediately or refrigerate until chilled. The flavors become even more delicious after a few hours in the refrigerator!
