Equipment

  • Stove top

Ingredients

  • 1 pouch Palmini Spanish Rice GRAB HERE
  • 1/2 cup Cooked chicken, seasoned with taco seasoning,
  • 1/3 cup Canned corn drained and rinsed
  • 2 TBSP Red onion Diced fine
  • 2 TBSP Nonfat Greek yogurt
  • 2 tsp Light mayo
  • Pinch Chili powder
  • Salt to taste
  • Black pepper to taste
  • Dash Lime juice to taste
  • 2 TBSP Feta cheese
  • 2 TBSP Cilantro chopped

Instructions

  • Add the Palmini Spanish Rice to a pan and saute for 3-5 minutes
  • Add the cooked seasoned chicken breast, corn and red onion
  • Saute until corn is charred
  • Season with a sprinkle of chili powder, squeeze of fresh lime juice and salt/pepper to taste
  • Mix yogurt, light mayo, pinch of chili powder, splash of lime juice in a small bowl and season to taste with salt and pepper
  • Place the rice mixture onto a plate or in a bowl
  • Drizzle the yogurt mixture
  • Garnish with feta and cilantro
