Ingredients

  • 2 pounds Carrots peeled then ribbon
  • 1 small Red onion thinly sliced
  • 1/4 cup Scallions thinly sliced
  • 1/3 cup Cilantro or Parsley chopped fine
  • 6-8 Garlic cloves or roasted garlic minced
  • 3 TBSP Low sodium soy sauce
  • 3 TBSP Rice vinegar
  • Salt to taste
  • Black pepper to taste
  • Sesame seeds (optional) to garnish
  • Hot crispy chili oil (optional) or hot honey

Instructions

  • Peel and ribbon your carrots using a vegetable peeler.
  • Add carrots to a large bowl.
  • Add the red onion, scallions, cilantro and garlic
  • Pour in rice vinegar & soy sauce
  • Season with salt and pepper.
  • Toss everything together until well combined.
  • Top with chili oil (optional for heat πŸ”₯) and sesame seeds (optional for crunch)
  • Let sit for 10–15 minutes for best flavor.
