- 2 pounds Carrots peeled then ribbon
- 1 small Red onion thinly sliced
- 1/4 cup Scallions thinly sliced
- 1/3 cup Cilantro or Parsley chopped fine
- 6-8 Garlic cloves or roasted garlic minced
- 3 TBSP Low sodium soy sauce
- 3 TBSP Rice vinegar
- Salt to taste
- Black pepper to taste
- Sesame seeds (optional) to garnish
- Hot crispy chili oil (optional) or hot honey

Peel and ribbon your carrots using a vegetable peeler.
Add carrots to a large bowl.
Add the red onion, scallions, cilantro and garlic
Pour in rice vinegar & soy sauce
Season with salt and pepper.
