Equipment
- Oven
- Mixing bowl
- Loaf pan
- Small saucepan
Ingredients
- 1/2 cup Salted butter
- 3/4 cup Brown sugar
- 4 small Bananas super ripe
- 2 Eggs room temperature
- 1 tsp Vanilla bean paste or 2 tsp vanilla extract
- 1 cup Sour cream or Greek yogurt
- 2 1/2 cups Flour
- 1 tsp Baking soda
- 1/2 tsp Baking powder
- 1/2 tsp Salt
Streusel Topping
- 3 TBSP Butter softened
- 1/2 cup Brown sugar
- 1/4 cup Flour
- 1 tsp Cinnamon
Instructions
- Preheat the oven to 350 degrees
- Place the butter in a small saucepan on low and melt butter
- Keep the butter on a low heat, mixing while melting
- Let the butter turn a light brown color then turn the heat off
- Pour butter into the mixing bowl and let cool
- Add the brown sugar to the cooled off butter and mix very well
- In a separate bowl add the bananas, mash very well then add the butter and cooled off brown sugar mixture
- Add the eggs, sour cream and vanilla. Mix until combined.
- Add the flour, baking soda, baking powder and salt
- Mix until combined, DO NOT OVER MIX
- Spray the loaf pan very well with cooking spray
- Pour the batter into the loaf pan
- In a small bowl, combine the streusel topping ingredients
- Mix until a crumble consistency
- Sprinkle on top of the batter in the loaf pan
- Place into the oven and bake for 55-65 minutes or until toothpick or cake tester comes out clean
- Remove from the oven and let sit in the pan for 15 minutes before removing
- Place on a wire rack and let cool more before slicing and enjoying
