Chocolate Covered Strawberry Protein Ice Cream

When I think of chocolate strawberries it makes me smile. I absolutely love them, but I do not like all of the calories and points for WW they bring along with it.

I decided to make another protein ice cream to taste close to a chocolate covered strawberry and it was delicious.

With only 205 calories for the ENTIRE pint and only 5 WW personal points you’ll be singing with happiness.

Here is what you will need:

  • Ninja Creami ice cream maker
  • Chocolate Fairlife protein shake (or shake of choice)
  • Simply Delish instant chocolate pudding (or sugar free pudding)
  • Vanilla bean paste or extract
  • Salt
  • Freeze-dried strawberries

I swear by the Fairlife shakes. I’ve tried other brands, but this one by far makes the most fulffiest and creamiest ice creams.

My favorite instant pudding mix is from Simply Delish. They are keto friendly, vegan friendly and sugar free as well. If you’d like try them out use code CHEFALLIE at Simply Delish.

You can certainly use regular vanila extract, but you will get more flavoring from vanilla bean paste. This is the one I order off of Amazon here.

When it comes to the strawberry flavoring, the freeze-dried fruits are the way to go. They have such strong flavors and i absolutely love the low calories they have as well. Here are the ones I order right off of Amazon right here.

Here is how to make it:

  1. In the Ninja Creami pint container combine the protein shake, pudding mix, vanilla bean paste and salt
  2. Mix until combine then place into the freezer with lid for 24 hours
  3. Once ready, take the pint lid off and place into the Ninja Creami bowl with the lid and blade
  4. Press the “lite ice cream” mode and let it run its course
  5. Once first cycle is done, repeat and press the “lite ice cream” button again
  6. If the ice cream isn’t creamy after the two lite ice cream cycles, continue to press the “re mix” button until nice and creamy
  7. Once creamy, take a spoon and make a hole in the center of the ice cream pint and pour the freeze-dried strawberries in
  8. Press the “add-in/mix in” button
  9. Once all combine, enjoy!

Crockpot Chicken Enchiladas

These were better than the restaurants! I even said that out loud to my husband while we were enjoying them,

Let the chicken sit and cook in the crockpot all day and a quick and easy roll up to the oven and dinner is done.

These will definitely be on repeat for meal prep and taco Tuesday’s.

 

Here is what you will need:

  • Crockpot
  • Chicken breast (Fresh or frozen)
  • Avocado oil (I use the spray kind)
  • Salt
  • Pepper
  • Dak’s Original Red (Or seasoning of choice). Paprika works
  • Dak’s Taco Knight seasoning or taco seasoning of your choice
  • Cumin
  • Rotel tomatoes in a can
  • Limes
  • Canned fat free refried 
  • Fat free cheddar cheese or cheese of your choice
  • Low carb tortillas or tortillas of your choice
  • Enchilada sauce
  • Cilantro

I use the Aldi brand a lot, but this brand is well known so that is why I wanted to show this one for reference. 

These are amazing and SUPER low in calories. Only 50 calories per tortilla

I love refried beans and I love fat free refried beans even more. This brand is the lowest calorie brand I’ve found.

I get a lot of people stating that fat free cheese never melts but if you put it into something covered it DEFINITELY melts and is SUPER low in calories and points

Red enchilada sauce is delicious and also low in calories as well. Make the enchiladas PERFECT and what they are meant to be.

 

 

How to make it:

  1. In the crockpot place the chicken
  2. Spray the chicken lightly with avocado oil spray
  3. Season the chicken with salt and pepper to taste
  4. Sprinkle the taco seasoning, cumin and Dak’s Original Red seasoning all over the chicken breast
  5. Take the can of Rotel and drain just a little juice out then pour over and around the chicken
  6. Put the lid on and set the crockpot to 6 hours if chicken is frozen and 4 hours if not frozen
  7. Once done, shred the chicken to your liking 
  8. Add some lime zest and lime juice
  9. Add a bunch of cilantro
  10. Set the oven to 375 degrees
  11. Get a casserole dish big enough to fit 6- 8 tortillas rolled up 
  12. Pour 1/4 of the sauce onto the bottom of the casserole dish
  13. Take 2 TBSP of the refried beans and smear that on each of the tortillas (2 TBSP each)
  14. Take 2.5 ounces of the chicken mixture and place on each of the tortillas
  15. Sprinkle about 1 TBSP of the cheese into the tortillas each then roll up and place into the casserole dish
  16. Take the remainder of the enchilada sauce and pour over the tortillas
  17. Take the remaining cheese and sprinkle on top of the tortillas
  18. Put some foil over the top of the casserole dish and back for about 20-30 minutes
  19. Uncover the casserole dish and place back into the over if you’d like a crisper top for about 15 minutes or broil for a few minutes

CROCKPOT CHICKEN

  • 1 pound Chicken breast frehs or frozen
  • Avocado oil spray
  • Salt & pepper to taste
  • 1/2 TBSP Dak's Taco Knight seasoning or taco seasoning of choice
  • Trader Joe's elote seasoning or seasoning of choice
  • 1 tsp Cumin
  • 1/2 tsp Chili powder
  • 1 14.5 oz Rotel tomatoes with green chiles Slightly drained
  • Lime zest of one lime
  • Lime juice of one lime
  • 1/2 Cup Cilantro Chopped

ENCHILADA COMPONENTS

  • 8 Ole Xtreme wellness high fiber tortillas or tortillas of your choice
  • 1 Can Old el paso fat free refriend beans
  • 3/4 Cup Kraft fat free cheddar cheese or cheese of your choice
  • 1 10 oz Red enchilada sauce

OPTIONAL TOPPINGS

  • Iceberg lettuce Shredded
  • Light sour cream or nonfat Greek yogurt
  • Cilantro to garnish
  • Lime wedges to garnish

Instructions

  • In the crockpot place the chicken
  • Spray the chicken lightly with avocado oil spray
  • Season the chicken with salt and pepper to taste

  • Take the remaining cheese and sprinkle on top of the tortillas
  • Put some foil over the top of the casserole dish and back for about 20-30 minutes
  • Uncover the casserole dish and place back into the over if you'd like a crisper top for about 15 minutes or broil for a few minutes

Peanut Butter & Banana Toast is a childhood favorite of mine.

I would load it with peanut butter and bananas but not knowing the number of calories I was eating.

This is my lightened version of my childhood favorite and is also packed with protein as well. 

Here is what you will need:

  • Royo Bread Company artisan bread or bread of your choice
  • Peanut butter, I use powdered peanut butter
  • Sugar free pancake syrup or syrup of your couce
  • Bananas
  • Dak’s Pumpkin Pie spice
  • Dak’s Chocolate Crave seasoning or cocoa powder
  • Pure Raw Brands wildflower honey or honey of your choice
  • Salt

Here is how to make it:

  1. Make the peanut butter with the peanut butter powder by slowly adding water until it is a nice peanut butter consistency. I also add a tiny bit of sugar free pancake syrup to sweeten it up
  2. Set the peanut butter aside and toast your bread
  3. Slice up the bananas super thin in order to use the entire banana for both slices of bread
  4. Smear the peanut butter over the two slices of toast followed by placing the banana slices down
  5. Sprinkle the pumpkin pie spice and chocolate crave spice
  6. Drizzle a little bit of honey on top with a pinch of salt
