Equipment

  • Cast Iron pan or saute pan

Ingredients

Caramelized Onions

  • 2 large Vidalia or sweet onions Diced
  • 1 tsp Avocado oil
  • 1/2 tsp Salt
  • Pepper to taste
  • 1 TBSP Light butter

Dip Ingredients

  • 3/4 Cup Cottage cheese I used Good Culture
  • 3/4 Cup Nonfat Greek yogurt
  • Pinch of cayenne optional
  • Dak's Original Red seasoning optional

Instructions

  • In a medium heat pan spray the avocado oil
  • Add the onions
  • Sprinkle a generous amount of salt onto the onions, helps release the water from the onions
  • Keep at a low heat stirring every few minutes, make sure they do not burn
  • Once the onions get a dark caramelized color (can take up to 30 minutes or more), add the tablespoon of butter. set aside to cool
  • In a mini food processor or blender add the cottage cheese, yogurt and blend until zero chunks and nice and smooth
  • Add salt, pepper and any other seasonings you would like
  • Pour into a bowl then add the cooled onions
  • Cover bowl and place into the refrigerator for minimum of 4 hours then serve as you wish.

I usually enjoy any kind of shellfish when my husband is at work since we are unsure if he is allergic to shellfish or not.

So, when he works, I eat something like this, and it was super easy to put together with a lot of store-bought ingredients.

Having 3 kids you tend to want something fast, and this was under 30 minutes from start to finish.

Ingredients

SHRIMP

  • 6 Jumbo Maker's Mark Shrimp
  • 1 tsp Dak's Taco Knight seasoning or taco seasoning of your choice
  • Salt & pepper to taste

COLE SLAW

  • 1 1/2 Cups Little salad bar classic coleslaw
  • 2 TBSP Don Pancho Cilantro lime crema
  • Zest of one lime
  • Juice of half a lime
  • Salt & Pepper to taste
  • Pinch of Dak's Taco Knight seasoning
  • 1/4 Cup Cilantro chopped

FIX-INS

  • 2 Ole Xtreme Wellness High fiber low carb tortilla wrap
  • 1-2 Cups Mixed greens or lettuce of your choice
  • 2 TBSP Trader Joe's Guacamole

GARNISH

  • Banana peppers
  • Cilantro to garnish

Instructions

  • In a bowl combine the shrimp, & seasonings set aside
  • In a separate bowl combine the coleslaw ingredients and place into the fridge until ready to use

  • 1 Ninja Creami Ice Cream Maker

Ingredients

  • 1 Bottle Fairlife strawberry protein shake
  • 1 TBSP Simply Delish sugar free pudding mix
  • 1 Bag Brothers All Natural freeze dried strawberries 7.5 Grams

Instructions

  • Combine the shake and the strawberry pudding mix and pour into the Ninja pint. Place into the freezer for 12-24 hours
  • Set the Creami to ice cream setting and blend. Re mix 1-2 times and if needed add a splash of almond milk to the center of the ice cream and re mix
  • Once it's all creamy and smooth, add the freeze-dried strawberries to the center of the ice cream making sure to get all the way to the bottom.
  • Set to mix ins setting and enjoy once all combine
