This stack was so much fun to make! Not only is it super cute to look at, it legit tastes like cake!

Need a cute way to celebrate someoneโ€™s birthday? Here you go! Or would you like to just eat cake for breakfast without the guilt? Either way, youโ€™ll absolutely love this!

This stack tastes just like a fluffy white cake with a delicious vanilla cream cheese frosting on top and yes it has sprinkles! Duh! ๐Ÿคช

INGREDIENTS FOR 3 SERVINGS:

โ€ข 1 Cup Hungry Jack pancake mix ( dry )

โ€ข 1/4 Cup egg whites

โ€ข 1/4 Cup unsweetened almond milk ( add a little at a time , if you need more add more until consistency is easy to pour )

โ€ข Splash of cake batter extract

โ€ข 1T Sprinkles

โ€ข 2T Philadelphia whipped cream cheese

โ€ข 5g Sugar free vanilla jello pudding mix

โ€ข 1-2T unsweetened almond milk ( add enough until you are able to pour over pancakes )

โ€ข Fat free Reddi whip

โ€ข Syrup of your choice ( I used Log Cabin sugar free )

STEPS:

โ€ข In a bowl mix the Hungry Jack, egg white, unsweetened almond milk & cake batter extract. Mix until consistency is loose enough to pour ( not too watery though )

โ€ข In a small bowl mix up the whipped cream cheese, sugar free vanilla pudding mix and the unsweetened almond milk ( place in fridge until ready to use )

โ€ข Heat up your pan or what I used was my Steel Made flat top ( Link in my Instagram bio โžก๏ธ Chefallieskitchen)

โ€ข Once all ready to go, take 1/4 cup portions of the batter. Sprinkle some sprinkles down and flip until golden on each side.

โ€ข Garnish the pancakes with the vanilla cream cheese frosting , whipped cream and a little more sprinkles. Use syrup or not, up to you.

โ€ข 2 tsp Vanilla
โ€ข 1 @egglandsbest Egg
โ€ข 1/4 Cup @aldiusa unsweetened apple sauce
โ€ข 1 tsp Baking powder
โ€ข 1 tsp Baking soda
โ€ข 1 tsp @daksspices Chocolate crave seasoning
( Or you could use a pinch of cinnamon & cocoa powder )
โ€ข 1/2 tsp Salt
โ€ข 1 Cup flour
โ€ข 1/3-1/2 Cup @cafebustelo instant espresso coffee ( dry )
( depends on how much youโ€™d like )
โ€ข 3 @jojos original bites or one bar ( Chopped )
โ€ข 3 @jojos Raspberry dream bites or one bar ( Chopped )

GARNISH:
โ€ข @icantbelieveitsnotbutter spray butter
โ€ข 1 tsp Cinnamon sugar
( I make my own )
โ€ข Flaky salt to garnish

STEPS:
โ€ข Preheat oven to 350
โ€ข In a large bowl mash the bananas, now all all the wet ingredients & mix until combined
โ€ข Add all of the dry ingredients ( not JoJoโ€™s)
โ€ข Pour into a parchment lined pan ( I use a 9×9 )
โ€ข Sprinkle the top with the @jojos Dark chocolate
โ€ข Bake for 35-40 minutes or until toothpick comes out clean
โ€ข Spray with butter, sprinkle cinnamon sugar & let cool before slicing
โ€ข Enjoy!

Ingredients

  • Avocado oil spray
  • 1 Small Red onion diced
  • 2 Cans Black beans drained and rinsed
  • 1/2 Can Fat free refried beans
  • 1/2 Cup Water
  • 1 tsp Cumin
  • 1 tsp Chili powder
  • 1/2 tsp Garlic powder
  • Salt & Pepper to taste
  • Cheese Optional

Instructions

  • In a small pot or pan spray with avocado oil spray and saute red onions until translucent.
  • Add everything else into the pan and turn heat to low
  • Toss lightly so you don't break the black beans and simmer until a nice smooth consistency
  • Add cheese if desired

Notes

Serves 4 at 3/4 Cup portions and 0SP on WW Blue and WW Purple plan and 5SP on green WW Plan
