Ingredients

โ€ข 1 cup egg whites (fresh preferred, but liquid carton egg whites work too โ€” just make sure they are room temperature)
โ€ข 1/2 teaspoon cream of tartar or cornstarch
โ€ข 6 packets stevia or sweetener of choice
โ€ข Cinnamon to taste
โ€ข Pinch of salt

Optional topping
โ€ข Honey butter or topping of choice

Instructions

  1. Preheat your oven to 400ยฐF.

  2. While the oven is preheating, prepare the egg whites. Place the room temperature egg whites into a stand mixer fitted with a whisk attachment.

  3. Beat the egg whites for 5โ€“7 minutes, or until stiff peaks form.

  4. Sprinkle in the cream of tartar, sweetener, cinnamon, and a pinch of salt.

  6. Line a cake pan with parchment paper. I used an 8ร—8 pan. Lightly spray the parchment with cooking spray.

  7. Carefully transfer the whipped egg white mixture into the prepared pan.

  8. Bake for 10โ€“15 minutes, or until the top is golden brown.

  9. Remove from the oven and drizzle with honey butter or your favorite topping.
