Street Corn Chicken Palmini Rice Bowl
Equipment
- Stove top
- Saute pan
Ingredients
- 1 pouch Palmini Spanish Rice GRAB HERE
- 1/2 cup Cooked chicken, seasoned with taco seasoning,
- 1/3 cup Canned corn drained and rinsed
- 2 TBSP Red onion Diced fine
- 2 TBSP Nonfat Greek yogurt
- 2 tsp Light mayo
- Pinch Chili powder
- Salt to taste
- Black pepper to taste
- Dash Lime juice to taste
- 2 TBSP Feta cheese
- 2 TBSP Cilantro chopped
Instructions
- Add the Palmini Spanish Rice to a pan and saute for 3-5 minutes
- Add the cooked seasoned chicken breast, corn and red onion
- Saute until corn is charred
- Season with a sprinkle of chili powder, squeeze of fresh lime juice and salt/pepper to taste
- Mix yogurt, light mayo, pinch of chili powder, splash of lime juice in a small bowl and season to taste with salt and pepper
- Place the rice mixture onto a plate or in a bowl
