Now, I donโt have to buy the premade store-bought ones, and honestlyโฆ homemade tastes SO much better!
Lately, Iโve been making more things from scratch because I love knowing exactly what goes into my food. Plus, letโs be realโhomemade is way more affordable, especially when you have a family to feed! These muffins are soft, fluffy, full of warm pumpkin spice flavors, and perfect for snacks, lunchboxes, or just for the morning. ๐โ

- Preheat the oven to 350 degrees
- In a large bowl, combine the flour, sugar, baking soda, salt, cinnamon, nutmeg and pumpkin pie spice
- In a separate bowl, combine the pumpkin puree, oil and water
- Add the eggs one at a time to make sure combined
- Make a well in the center of the dry ingredients bowl with a spoonย
- Add the pumpkin mixture to the well and stir until batter is combined and moistened
- Spray your mini muffin pan generously with cooking spray or avocado oil spray
- Take a small cookie scoop (I use this one) and scoop batter into the mini muffin pan
- This recipe makes more than 24, so two batches will have to be baked
- Place into the oven for 12-15 minutes or until toothpick comes out clean
- Let rest in pan for a few minutes before removing and place onto a cooling rack
- Repeat steps 7,8,9 and 10
