1PoundChicken breast
2tspItalian seasoning
1/2CupNonfat Greek yogurt
1/2CupGrated parmesan cheese
1CupFat free Kraft cheddar cheese
12OuncesBroccoliCooked
Instructions
In a crockpot add the chopped onions.
Add the rinsed and drained rice.
Add the dijon mustard, garlic powder, dried thyme, salt and pepper.
Pour the chicken broth in and mix everything together.
Place the chicken breast in and season the chicken with salt, pepper and then the Italian seasoning.
Cook on low for 6-8 hours.
Remove chicken and chunk or shred (personal preference). Set aside.
In a bowl, combine the nonfat Greek yogurt, parmesan cheese and cheddar cheese.
Take the yogurt and cheese mixture and place into the crockpot.
Mix until combine and creamy.
Add more broth if needed.
Add the chicken back in followed by the broccoli.
Enjoy and serve with an extra veggie or salad
