Cheesy Chicken, Rice and Broccoli
This is such an amazing comfort food. It is so beyond easy to throw together and can feed a crowd.
This recipe serves 8 at 4 WW and only 239 calories. Serve with an extra side of veggies or a salad and you have the perfect meal.
It also makes a great option for meal prepping as well.
Here is what you need:
- Crockpot
- Onion
- Brown rice
- Dijon mustard
- Garlic powder
- Dried thyme
- Chicken broth
- Chicken breast
- Salt
- Pepper
- Italian seasoning
- Nonfat Greek yogurt
- Grated parmesan
- Fat free cheddar cheese
- Broccoli

You can use whatever brown rice you would like.
Onions are an ingredient that I ALWAYS have on hand.
You can use fresh or frozen chicken for crockpot meals. If using frozen just make sure the setting is usually 6-8 hours on low.
Nonfat Greek yogurt is another ingredient that I ALWAYS have on hand. I use for so many things and it is a GREAT alternative to sour cream.
I do not like using the shaker parmesan cheese, I prefer using freshly grated parmesan. I always have fat free cheddar and fat free mozzarella from kraft in our fridge.
Frozen broccoli, the steam in bag is another thing that I ALWAYS keep STOCKED in my freezer. I prefer using frozen over fresh because it is always perfectly cooked and BRIGHT green for color.
Here is how to make it:
- In the crockpot, add the chopped onions
- Add the rinsed and drained rice
- Add the dijon mustard, garlic powder, dried thyme, salt and pepper over the onions and rice and mix
- Pour the chicken broth in and mix everything together
- Place the chicken breast in and season chicken with salt, pepper and Italian seasoning.
- Cook on low for 6-8 hours.
- Remove chicken, chunk or shred and set aside.
- Mix up the yogurt and cheeses.
- Add a little more chicken broth
- Add the chicken back into the crockpot follwed by the broccoli
- Serve as is or with some extra veggies or salad

- 1/2 Cup Onion diced
- 1 Cup Brown rice rinsed and drained
- 1 TBSP Dijon mustard
- 1 tsp Garlic powder
- 1 TBSP Dried thyme
- Salt to taste
- Pepper to taste
- 3 Cups Kettle & Fire chicken broth or broth of choice
- 1 Pound Chicken breast
- 2 tsp Italian seasoning
- 1/2 Cup Nonfat Greek yogurt
- 1/2 Cup Grated parmesan cheese
- 1 Cup Fat free Kraft cheddar cheese
- 12 Ounces Broccoli Cooked
Instructions
- In a crockpot add the chopped onions.
- Add the rinsed and drained rice.
- Add the dijon mustard, garlic powder, dried thyme, salt and pepper.
- Pour the chicken broth in and mix everything together.
- Place the chicken breast in and season the chicken with salt, pepper and then the Italian seasoning.
- Cook on low for 6-8 hours.
- Remove chicken and chunk or shred (personal preference). Set aside.
- In a bowl, combine the nonfat Greek yogurt, parmesan cheese and cheddar cheese.
- Take the yogurt and cheese mixture and place into the crockpot.
- Mix until combine and creamy.
- Add more broth if needed.
- Add the chicken back in followed by the broccoli.
- Enjoy and serve with an extra veggie or salad
