Cheesy Chicken, Rice and Broccoli

 

This is such an amazing comfort food. It is so beyond easy to throw together and can feed a crowd.

This recipe serves 8 at 4 WW and only 239 calories. Serve with an extra side of veggies or a salad and you have the perfect meal.

It also makes a great option for meal prepping as well. 

Here is what you need:

  • Crockpot
  • Onion
  • Brown rice
  • Dijon mustard
  • Garlic powder
  • Dried thyme
  • Chicken broth
  • Chicken breast
  • Salt
  • Pepper
  • Italian seasoning
  • Nonfat Greek yogurt
  • Grated parmesan
  • Fat free cheddar cheese
  • Broccoli

 

The crockpot has always been the best thing to have and is great for meal prepping or just busy days/schedules. This is an appliance that I HIGHLY recommend purchasing. Click HERE for one. 

You can use whatever brown rice you would like.

Onions are an ingredient that I ALWAYS have on hand.

 

You can use fresh or frozen chicken for crockpot meals. If using frozen just make sure the setting is usually 6-8 hours on low. 

Nonfat Greek yogurt is another ingredient that I ALWAYS have on hand. I use for so many things and it is a GREAT alternative to sour cream. 

I do not like using the shaker parmesan cheese, I prefer using freshly grated parmesan. I always have fat free cheddar and fat free mozzarella from kraft in our fridge. 

Frozen broccoli, the steam in bag is another thing that I ALWAYS keep STOCKED in my freezer. I prefer using frozen over fresh because it is always perfectly cooked and BRIGHT green for color. 

Here is how to make it:

  1. In the crockpot, add the chopped onions
  2. Add the rinsed and drained rice
  3. Add the dijon mustard, garlic powder, dried thyme, salt and pepper over the onions and rice and mix
  4. Pour the chicken broth in and mix everything together
  5. Place the chicken breast in and season chicken with salt, pepper and Italian seasoning. 
  6. Cook on low for 6-8 hours.
  7. Remove chicken, chunk or shred and set aside. 
  8. Mix up the yogurt and cheeses.
  9. Add a little more chicken broth 
  10. Add the chicken back into the crockpot follwed by the broccoli
  11. Serve as is or with some extra veggies or salad

  • 1 Crockpot

Ingredients

  • 1/2 Cup Onion diced
  • 1 Cup Brown rice rinsed and drained
  • 1 TBSP Dijon mustard
  • 1 tsp Garlic powder
  • 1 TBSP Dried thyme
  • Salt to taste
  • Pepper to taste
  • 3 Cups Kettle & Fire chicken broth or broth of choice
  • 1 Pound Chicken breast
  • 2 tsp Italian seasoning
  • 1/2 Cup Nonfat Greek yogurt
  • 1/2 Cup Grated parmesan cheese
  • 1 Cup Fat free Kraft cheddar cheese
  • 12 Ounces Broccoli Cooked

Instructions

  • In a crockpot add the chopped onions.
  • Add the rinsed and drained rice.
  • Add the dijon mustard, garlic powder, dried thyme, salt and pepper.
  • Pour the chicken broth in and mix everything together.
  • Place the chicken breast in and season the chicken with salt, pepper and then the Italian seasoning.
  • Cook on low for 6-8 hours.
  • Remove chicken and chunk or shred (personal preference). Set aside.
  • In a bowl, combine the nonfat Greek yogurt, parmesan cheese and cheddar cheese.
  • Take the yogurt and cheese mixture and place into the crockpot.
  • Mix until combine and creamy.
  • Add more broth if needed.
  • Add the chicken back in followed by the broccoli.
  • Enjoy and serve with an extra veggie or salad
