Instructions
Preheat the oven to 350 degrees
Shred the carrots and set aside
In a bowl add the bananas and mash completely
Add the eggs, unsweetened applesauce, vanilla extract and mix until combined
Add the baking powder, baking soda, monk fruit sweetener, flour, cinnamon and a pinch of salt
Mix until combined
Add the shredded carrots and fold into the batter
Scoop out 12 portions into a greased muffin pan
Top with the coconut
Bake for 25-30 minutes
Let cool for 10 minutes
