Ingredients

  • 3-4 Bananas
  • 2 Eggs
  • 1/4 Cup Unsweetened applesauce
  • 1 tsp Vanilla extract
  • 1 tsp Baking soda
  • 1/8 tsp Baking powder
  • 1 tsp Cinnamon
  • 1/2 Cup Monkfruit sweetener or sweetener of choice
  • 1 Cup Flour
  • 1 Cup Carrots Shredded
  • 1/4 Cup Unsweetened coconut flakes

Instructions

  • Preheat the oven to 350 degrees
  • Shred the carrots and set aside
  • In a bowl add the bananas and mash completely
  • Add the eggs, unsweetened applesauce, vanilla extract and mix until combined
  • Add the baking powder, baking soda, monk fruit sweetener, flour, cinnamon and a pinch of salt
  • Mix until combined
  • Add the shredded carrots and fold into the batter
  • Scoop out 12 portions into a greased muffin pan
  • Top with the coconut
  • Bake for 25-30 minutes
  • Let cool for 10 minutes
