Ingredients
- 3-4 Bananas
- 2 Eggs
- 1/4 Cup Unsweetened applesauce
- 1 tsp Vanilla extract
- 1 tsp Baking soda
- 1/8 tsp Baking powder
- 1 tsp Cinnamon
- 1/2 Cup Monkfruit sweetener or sweetener of choice
- 1 Cup Flour
- 1 Cup Carrots Shredded
- 1/4 Cup Unsweetened coconut flakes
Instructions
- Preheat the oven to 350 degrees
- Shred the carrots and set aside
- In a bowl add the bananas and mash completely
- Add the eggs, unsweetened applesauce, vanilla extract and mix until combined
- Add the baking powder, baking soda, monk fruit sweetener, flour, cinnamon and a pinch of salt
- Mix until combined
- Add the shredded carrots and fold into the batter
- Scoop out 12 portions into a greased muffin pan
- Top with the coconut
- Bake for 25-30 minutes
- Let cool for 10 minutes
