Chipotle Chicken Mini Street Tacos

Equipment

  • Mixing bowl

Ingredients

  • 4 pounds Chicken breast cut into bite size pieces or strips

CHICKEN MARINADE

  • 1/2 cup nonfat Greek yogurt I used ALDI brand
  • 1/4 cup Chipotle peppers in adobo sauce I used GOYA brand
  • 1 TBSP Tomato paste
  • 1 packet Low sodium Taco seasoning I used Siete brand
  • 3 TBSP Lime juice
  • 4 Garlic cloves
  • 1 tsp Salt to taste
  • 1/4 tsp Black pepper to taste

Instructions

  • Prep the Chicken:
    Cut chicken breast into small bite-sized pieces or strips.
  • Make the Marinade:
    In a small blender add:
    Nonfat Greek yogurt, Chipotle peppers + adobo sauce, tomato paste, Lime juice, Taco seasoning, Garlic cloves, Salt & pepper
  • Next in a large bowl, mix:
    The marinade, the chicken and mix until fully coated. Let marinate at least 60 minutes or overnight = even better )
  • Cook the Chicken:
    Bake at 425°F for 15- 20 minutes or sauté in a pan over medium heat until fully cooked.
  • Build the Tacos
    Warm tortillas, Chop chicken roughly, Add 2 oz cooked chicken per taco, Top with 2 TBSP cheese, Fold in half, Brush with some adobo sauce (optional)
  • Pan fry on saute pan/griddle, bake or air fry until cheese is melted and taco shell is crispy 
    Serve immediately or portion into containers for the week.
  • Serve with guacamole, pico de gallo and some cilantro cream sauce
